My Version of Cookie Dough

Good Morning 🙂

Hope you all had a fun day yesterday and are looking forward to a laid back, fun-filled weekend! Speaking of weekend, I will fill you in on mine tomorrow but there is something I am DYING to share with you.

So, yesterday I was really craving some chocolate, and peanut butter AND cookie dough. Oh, okay. Well since I did not really just want to run out and buy a tub of cookie dough 😉 I decided to make a little something of my own.

I have seen this protein cookie dough recipe on STUFT Mama’s blog and always want to make it but have never gotten around to it. Yesterday was the day!

Unfortunately, I did not have even half of the ingredients so I just became a little creative. Here you have my delicious version of peanut butter cookie dough topped with a chopped up dark chocolate square. I know, SO GOOOOOOD right?! Trust me, it might not look good, but it is really tasty and a great little snack if you are not just starving but in the mood for a treat!

PB2 Cookie Dough 

Ingredients:

PB2 (as much as you desire) + 2-3tbsp of oats + Splash or two  of almond milk (depending on how mushy you like it) + Dove dark chocolate square (chopped, makes it more like chocolate chips) 

Preparation: 

Put PB2, oats, and almond milk in a bowl, mix it, stick it in the fridge for a bit, throw in some dark chocolate.

Date Night

Hello everyone!!

SO last night I had the BEST date night 🙂 Not with Parker BUT with my Big who I talk about ALL the time!

We went to Patrizio, which I know I have already mentioned a few times to ya’ll and it was just as good as always!

Sometimes I get stuck in a food rut and find one thing at resturaunts that I like and then I ALWAYS HAVE to order that same thing. Last night was no different.

We started with a glass of red wine and a nice, warm bread basket. For my entree, I had the grilled chicken salad (sans cheese and bacon with dressing on the side). And since it was date night you KNOW we got dessert. Flour-less chocolate cake = heaven in my mouth.

It was so much fun just catching up with her (not that we do not already talk 60001010290190182 times in one day). We always have the best talks!

Can not believe it is Friday! This week has flown by yet again. So excited for this weekend 🙂

I plan on being VERY productive today, hopefully that happens!!

WIAW: {Locked in the J School}

Hello everyone!!

Posting at 11 pm… Who am I?? Well… I just got back from the J (journalism) school and it is MUCH EARLIER than I expected!! 🙂 Yay for once in my life doing a little bit every day so I did not have to cram!

I did not want to skip out on my usual WIAW post, so I am going to share with you my very, very random eats of today… all while being locked away working on a broadcast package!

Breakfast- 7:00 am

Since I knew that I was going to have a busy day ahead, I ate a giant breakfast to try and stay full!

Eggs + Multigrain english muffin + two slices of turkey bacon (somewhere) and of course, COFFEE!

Lunch part 1- 11:00 am

As I was leaving this morning, I decided to pack a quick half PB + banana sandwich just in case I would not have time to come back to the house.

I am so glad I packed this because my stomach was rumbling and I did not get back until around 3 pm. Talk about GRIZZLY?!!!

Workout: 

I absolutely HAD to go sweat as soon as my noon lab was over. I was getting cranky and irritable and since I would be with all of my J friends for mostly the rest of the day, I hit the treadmill for 45 minute intervals + did a few abs!

Ya’ll are welcome for me sparing you of my horrible mood I would have been in 🙂 !!

Post Workout Snack/ Lunch Part 2- 3:30 

I was SO hungry by this point!! I grabbed a handful of almonds to hold me over while I made a gigantic smoothie.

Strawberries + half banana + mixed berries + greek yogurt + activia + splash of OJ + water + SPINACH (finally some veggies in my day!!!).

Dinner- 7 pm

This should come as no surprise. YES, I PROMISE I eat other things besides just Zoe’s grilled chicken greek salad.

Dessert

Overall, I know today’s eats were random but I tried to do the best I could with the little time I had! Especially on days where I will not be home for a while, I really try to plan ahead so that I do not end up making bad decisions or eating things that are quick and just leave me feeling gross!

Awesome Ending

Happy Monday!!

So… the last time we talked my weekend was off to a perfect start. And it ended just as awesome!

Saturday afternoon when my parents got here my dad and I (while my mom got ready) went to Taco Diner for a drink and appetizers and caught up for a little while and Mallory came and met us!!

Once we left, I went back to the Palomar hotel with him while they finished getting ready.

Seriously, how cute are they?! PROM (it was a black tie event!!) haha!

Sunday morning I was up bright and early and met up with my dad to watch Mal run the Rock n’ Roll half marathon. YAY SO PROUD!! She finished in 1:50. How awesome is that?!!!

I am absolutely DYING to do one now. It looks so much fun.

The rest of the day was spent spending time with my parents having brunch, walking the Katy Trail, sitting by the pool and ended with dinner at Mi Cocina and Elizabeth joined us!

Such a FUN weekend. Very relaxing. Yummy food. My day ended with this beauty:):

Perfect Start

Hey friends!!

Happy Saturday! This week seemed to absolutely fly by for some reason. It feels like right after spring break  summer comes before you know it!

My weekend is already off to a perfect start! Yesterday after class I went to Bikram (always leave feeling amazing!) and then went on a walk with my big who I love more than anything in the entire world!!!

Everyone is out of town this weekend so last a night a few girls went to dinner at Coal Vines! We had to wait for a little bit but we were perfectly content with having our glass(es) of wine 🙂 and the restaurant brought out appetizers (bruschetta and a slice of pizza) twice for us to enjoy while we waited. How nice is that?!

If you are in Dallas you have to go to Coal Vines! This was my fifth or sixth time to go there and it has been delicious every time. The prices are super reasonable too.

Once we were seated (outside, the weather is phenomenal right now) we immediately ordered two appetizers. Garlic bread and calamari! Calamari is my all time FAVORITE appetizer and I love how they also included zuchinni in the mix. Delicious!

For dinner we ordered two pizzas to share, a pepperoni and the white special with chicken.

I used to HATE pizza because I am not a big fan of Papa Johns, Dominos, etc. (no offense, just me personally!!) but I do really love fresh, brick oven pizza from good places. On the side I had a ceaser salad.

We had originally planned to go out but after dinner and a few glasses of wine, we had full bellies and decided to call it a night!

This morning I did not wake up until 9:30!! I think this is the latest I have slept since last summer. For those of you who know me, I LOVE the mornings and usually pop right out of bed by 6:30-7 am without an alarm (if I set an alarm I am up usually way earlier) but I decided not to set one and it felt so good to get some sleep. I guess my body needed it!

Once I got up, I immediately laced up my tennis shoes to go for a run outside.  I can not get enough of this weather. It is absolutely gorgeous. AND If I do not work out first thing on Saturday morning, chances are I probably will not do it.

I was going to run through Highland Park but decided to take a detour and ran on the Katy Trail instead. I forget how much I love the Katy! Not only is it a great place to run but especially on Saturday mornings it is packed with all kinds of people walking, running, rollerblading or biking. Everyone has their dogs out and it just makes me so happy! One of my favorite parts of living in Dallas is that everyone (most)  lives such active, healthy lifestyles.

Speaking of living active lifestyles, one of my best friends is running the Rock n’ Roll half marathon tomorrow!!!!! YAY MALLORY (the one in the pic with the calamari)! This is her second one but she is such an incredible runner and I am so jealous. It takes me twice as long to run the same distance as her! SO PROUD OF YOU 🙂

I had a nice huge cereal combo and COFFEE as soon as I got back on the Kappa patio!

Off to shower and then meet up with my parents who are coming in town today for a party tonight!! Hope you all have an active, fun Saturday and a fabulous rest of the weekend!

WIAW: {Grizzly and Healthy Tidbit}

Good Morning!!

Hope ya’ll are having a great week so far! I can not believe it is almost halfway through.

My WIAW is not quite that exciting considering all of the amazing food I ate last week. It really is hard to come back from vacation and all kinds of yummy food to normal ole’ eats!

Breakfast:

Okay so maybe it is not that bad since my breakfast was my FAVORITE!

 In case you forgot 😉 Oatmeal pancakes topped with PB2 (a drop of honey) + half a banana and a cup of blueberries and strawberries + sugar free syrup. So good!!!!!

Lunch:

Lunch was kind of random. I was really hungry but not in the mood for anything. Does that ever happen to you?

For lunch at the KKG house there was some kind of black bean salsa (black beans, avacado, tomato, cilantro, corn, no idea what else!) so I warmed up a whole wheat tortilla and topped it with the salsa and bell pepper strips. Pretty good but a lotttttttt of cilantro for my taste buds. The black beans and avocado gave it a really nice punch of protein.

On the side I had fruit: pineapples, peaches, strawberries and purple grapes.

For dessert I had a sugar free chocolate Jello pudding. I have been craving one since Sunday. Is that weird?

Snack:

For some reason I was SO sleepy today so since  I was already in the bookstore, I grabbed an un-sweet iced coffee from Starbucks with a splash of creamer and it did the trick! I only drink caffeine on a very rare occasion in the afternoons, but I just needed it today.

I also had a handful of  cocoa roasted almonds.

Dinner: 

I know ya’ll FOR sure think I eat nothing besides this greek salad from Zoe’s. But on Tuesdays I am usually at The Daily Campus working on my articles in the middle of dinner so this is just a quick, easy, healthy option. Otherwise I leave ready to knaw my arm off and GRUMPY.

Speaking of grumpy, do any of you get just MEAN if you have not eaten? Well, I am the most unpleasant person in the world to be around if I am hungry. Parker decided a name for “my side” that comes out when I am hungry while we were at the beach: Grizzly. Cute, right?

After Dinner Snack:

I ate dinner super early (like 5ish) and then went to Bikram so by the time I was home around 10pm I was starving! I still had to go film at the library and finish some homework, so I grabbed a small apple with chocolate PB2 to ward off the hunger beast (FML).

Yesterday I spent a good chunk of my day running around Dallas filming for a broadcast package on the danger of college students pulling all nighters. I actually thought this was going to be pretty boring but now I am excited about it because it is quite relevant to my life!

I interviewed John Truitt, CEO of Simple Sleep Services and learned  a lot of interesting things all related to not getting an adequate amount of sleep. I do not want to go too in depth with the all nighter thing (I will share that with you when I finish my package) BUT we did chat for a little while about how sleep deprivation contributes to weight gain.

He said when you do not get enough sleep your cortisol levels increase which causes the extra weight to sit particularly in the stomach and neck area. He also said that he finds many clients think the longer you stay awake the more calories that you burn when in fact, it is the complete opposite.

I have read a lot of recent studies about this but it was pretty cool to hear it come straight from an expert. Regardless of whether or not you are trying to lose weight, getting enough sleep is vital to your health both mentally and physically. (I am one to talk… some weeks I do great and other weeks I get less than 3-4 hours a night… I am really going to try to work on this!)

Longest Post of the Best Week EVER!!

Hello everyone 🙂

Hope you had a fabulous Monday! Okay so I wanted to give you a recap of my amazing spring break… if you do not want to read a gazillion long post just stop reading now! Haha

OH… and I forgot to take any pictures really OF COURSE except for of food because yall know what a foodie I am (I mean I guess that is a huge part of this blog ya think?!)…. but I will do my best to describe everything.

Friday:

So… when I left you I was driving home on Friday.

Friday afternoon as soon as I got home Parker came over for a little bit and unloaded my entire car for me  then left to go to his fishing camp in Louisiana. I finished packing and then my daddy and I went to our favorite restaurant in the whole world, Keifers. I had my favorite meal: grilled chicken greek salad with their special feta dressing that I crave on a daily basis.

Saturday:

Saturday morning I was up and moving really early and did a quick (went all out for 12 minutes because I was rushed) interval run then headed to the airport! Once we got to NYC, we went straight to Remi for dinner. I had two glasses of wine and this amazing grilled chicken palliard that actually covered the whole plate on top of a huge bed of spinach. Even though I was absolutely famished, I thought there was no way I could eat the whole thing (it was HUGE) but I did. It was delicious. Just the start of all of my wonderful eats over the course of the week 😉

Sunday:

Sunday morning we were ready to go SHOPPING! We spent most of the morning shopping around and then Katie and I took ourselves on a little date at this precious place (I can not remember the name of it to save my life). We immediately ordered mimosas and I had a great grilled chicken sandwich that came with the best homemade fried EVER! I also ordered a side of fruit because I was really lacking in the nutrient department for the day.

Sunday night we went to this little local Italian restaurant, Serafina  (I forgot to take pictures UGH) and I had the best margarita pizza with a side salad and for desert a chocolate cake with nutella in the middle. I felt like I was dreaming 😉

Monday: 

Monday we were out and about shopping again and went to Bergdorf’s for a girly lunch. This may be one of my most favorite things to do in NYC! The view is incredible and it really is just so much fun.

We spent tons of time there that day and hit up a few more places before booking it to an early dinner that night at a great place I can’t think of the name!!!!!

As soon as we were done eating, we went to see The Phantom of the Opera. This was my second (maybe third?!) time to see it on Broadway but it NEVER gets old to me. I just love it and the cast really was incredible.

Tuesday: 

We were up early and ready to go to Soho to shop! This is my favorite part of New York. I love all of the restaurants and precious little boutiques. We had SUCH a fun day! Okay I am so, so, so excited to share this with you because it may be in my top 5 favorite things I have ever eaten (Parker will tell you… that is saying A LOT). We stopped at Dean and Deluca for a quick lunch and I immediately saw the veggie burger and was sold. It was HUGE and so fresh and filled with so many yummy veggies. It was served on a gigantic multigrain bun but I could not even eat the bun because the veggie patty was that good. 

By Tuesday at 5 we were ready for a drink. We stopped at Dos Caminos for a little happy hour before heading to Cafe Cluny in West Village for dinner. I had the grilled trout and a brussel sprout leaves salad. Delicious but sadly no pictures 😦

Wednesday: 

I left early in the morning (Katie ended up staying later, lucky!!) to get back home where Parker picked me up from the airport and we headed straight to the beach where my family was!

As soon as we got there we met my parents for a drink in Alys Beach at the pool’s restruant, Caliza. I felt like I was in a different country. I know that sounds so strange but Alys really is so beautiful and the pool is unbelievable!!

Thursday: 

I got in a nice long run and just sat around and relaxed for a little while. This might sound crazy but my favorite part besides laying on the beach and not moving for hours about going to the beach is the mornings. I absolutely LOVE to run at the beach and then come back and drink my coffee and eat breakfast. I know I am so weird. For the rest of the day I moved from the beach to the pool back to the beach. It was such a fun and relaxing day!

Thursday night Parker and I went with my parents to dinner and of course I took no pictures but it was delicious and very fun!

Friday: 

Friday was another great, lazy day! I slept in and woke up and lounged around then headed out to the beach for a 6 mile walk. It was a gorgeous day! Parker and I went to lunch at this cute little cafe in Rosemary, again… no pictures.

Friday night Parker cooked his famous shrimp (poor thing he always gets stuck cooking at the beach for my family) and it was amazing as usual! I made sweet potato fries as a side 🙂 and no picture again UGH.

After dinner we went with my sister and Jacob to have dessert at this adorable little tapas and chocolate bar place, La Crema. We started with a chocolate fondue and had the chocolate molten cake with vanilla ice cream. (Parker.. if you love me you will take me back immediately to get that again). It was my favorite dessert I have ever eaten. That really is saying a lot. The only thing that could have possibly made it better would have been mint chocolate chip ice cream instead of the vanilla 😉

Saturday: 

Unfortunately we had to leave the beach and head back home 😦

We got stuck in a ton of traffic and finally made it back in time to go to a crawfish boil with P’s parents and some of their friends.

Sunday: 

Sunday my mom rode with me and we headed back to Dallas. I was very happy to see everyone but can not believe it is time to get back to reality!

AH do not want to go to class today. And the weather is SO GROSSSSSSSS.

I really did have the best spring break ever!! I am so lucky to have such an amazing best friend 🙂 We had the BEST TIME and could not have had more fun together!!!

And my family just rocks. Anytime I get to spend with them is awesome!

Sorry for the long post. Back to normal tomorrow.

Best Week EVER!!

Hello friends!!

Oh my goodness have I been MIA or what? Well… in NYC it was $13 a day to get on the computer and I did not have any service at the beach so I just decided to take a week to disconnect from the world!

I will be back later today with a recap of both of my trips, I just wanted to pop in and say I am alive and Happy Monday! If you were on spring break, I hope you had a wonderful, safe trip and I hope everyone had a fun St. Patty’s Day!

I am happy to be back in Dallas but not ready to start classes AH 😦

Good morning 🙂 Hope you all are doing well. Midterms done. Quiz over. Broadcast package turned in. I could not be more happy!

This morning I popped right out of bed to get my sweat on at the 5:30 am Bikram. I really wanted to get my workout done for the day because as soon as I am out of class, I am headed home! I am not looking forward to the 6 hour drive BUT I am excited to see my girrlll (my dog, Emma) and my dad. My mom and sisters will be in Birmingham for the weekend at Rollins dance competition and I am sad I will miss them but can’t wait to get a little one on one time with my daddy.

So, I still have not told you all where I am going for Spring Break? Any guesses?

Yep, NYC. And the best part?!! With my BFFFFFFFFFFFFFFF from highschool! Cant wait for the city (it has been too long!) but I am more exciting to be with her for 4 days.

Senior year prom!

We are leaving tomorrow morning. So, if I am MIA- you know where I am. I will try to keep you updated but ya know… I am going to be living it up!

When we get home on Wednesday, P is picking me up at the airport and we are headed to the beach to meet my family.

I get the best of both world this spring break. My two favorite places in the world. New York and anywhere with a beach.
