I am still here!

Hi guys!!

I am still here:) absolutely loving DC and can’t wait to share more with you all. I officially start my internship today but don’t move into my apartment until Friday so for now I am in a hotel with $12 wifi… I will hopefully post ASAP!

Hope y’all are having a great week.

Thursday Things + a New Workout

Hey friends!

How’s life?!! Mine has been pretty uneventful this week. Great and relaxing, but uneventful!Β I love being home but I am getting really excited to leave for DC.

Today, Becca and I met my grandmother for lunch and then we ran errands all day. She is leaving to work at a Young Life camp in Arizona for a month tomorrow. I did this in high school and I am SO excited for her!! Really, really hard work but so humbling and an unforgettable experience.

When I last chatted with you on Wednesday, I ran for the first time in over a week and my knee felt great! But I am still trying to take everything slow and build back up BUT today I was really in the mood for a good sweat.

I created this fun little cardio + strength circuit workout. I was jamming my music super loud and it FLEW by!! I wanted to share it with you all in case any of you are in a rut like I am with your workouts.

**During the cardio parts do whatever you want! Run, walk, jumping jacks, mountain climbers, jump rope or whatever else you please. I did running/ walking intervals on the treadmill and that worked great for me.

**I did each circuit twice. Each strength move for 30 seconds and moved on to the next one with no rest in between. Once I completed the circuit, I rested for 30 seconds and did it again! I forgot to pay attention to the time but I estimate it took me between 50-55 minutes.

Repeat Circuit + 5 min Cardio Workout

Warm up: 5 minutes

Circuit 1 x 2:
Reverse Fly with Dumbells
Push Ups
Skull Crushers
Cross Jab with Weights

5 minute cardio

Circuit 2 x 2:
Sumo Squats
Walking Lunges
Steady Lunge with Bicep curl
Calf raises with weights

5 minute cardio

Circuit 3 x 2:
Side to side crunches
Side to side plank
Twisting knee plank
Steady plank hold

5 minute cardio

Circuit 4 x 2:
Tricep dips
Dumbell pull overs
Bicep Curls
Shoulder press

5 minute cardio

Circuit 5 x 2:
Front shoulder raises
Side shoulder Raises
Plie squats
Bicycle crunches

Cool down: 5 min cardio (I actually ended up cooling down for a bit longer and walked a slow mile!)

Hope you like it!! I would love to know your thoughts?!!

After my little workout I foam rolled for like 20 minutes. I am addicted to this thing.

When Dad got home we went to Wraps and I got the Talapia salad. I know it is hard to see all the veggies under this massive piece of fish but there are enough cucumbers and tomatoes on this salad for an army πŸ™‚ And you know I cleaned my plate.

Oh, I thought I would show this to you all if anyone needs a good laugh?! When we got home from running errands we found Boy in the driveway sleeping like this. It is a ROUGH life being a Parker animal.

Thats all I have for today! Have a great night πŸ™‚

Off to DC!

Hey ya’ll!

Mom and I started our trek to DC this morning! We are breaking up the drive in 2 days (I know, miserable, but I need my car). I am excited to spend a little one on one time with her before I start my internship.

Speaking of my internship, I have not really shared with you all what exactly I am doing. I will be interning at the NBC network. I am REALLY excited and even more excited to be there during the heat of election time!!

It should be an awesome experience and as always, I will keep you all updated. I know I have mentioned this before, but I will be living with one of my best friends from high school, Cecilia, who goes to Georgetown!!

Me, Cecilia, and Katie Love!!

Me, Cecilia, and Katie Love!!

I literally love Georgetown (and Ceci, obviously!!) so I know it is going to be a GREAT summer!

LOVE all of the little “houses”

And I hope my wallet survives.

I have a feeling I will be spending a lot of time here….since last time I was in DC I got a DOZEN and ate a bite of every single one because heaven forbid I pick two or three (are you embarassed for me?!!).

But the real question is, which of my favorite flavors do I pick?!

Have a great weekend! See you tomorrow from Knoxville, TN:)!!

WIAW {Where is my appetite?!}

Good morning friends!

Can you believe the week is halfway over? I certainly cant! AND it is time for another WIAW. This one is not too exciting considering I barely had an appetite yesterday. Maybe it was from all the yummy eats over the weekend? I am not sure but I definitely was not my usual hungry monster self.

Thanks Jenn for hosting this, as always!!

Breakfast (7:45 am):

This is my perfect go to breakfast when nothing really sounds all that great.

Slice of 12 grain bread + almond butter + half a banana + blueberries + sprinkle of Chia seeds and a drizzle of honey .

Lunch (1:45 pm):

I did not even eat my morning snack. I really do not know what got into me haha!

Drank a mixed berry green smoothie (frozen berries + half a frozen banana + splash of OJ and water + TONS of spinach + a few dallops of ChobaniΒ yogurt) and ate a little energy bite on the side.

I went to get Gumbo because she was moping around that P left. And then I cried. Like really?? What is my problem?! We go weeks without seeing each other ALL the time.

I walked her for about 25 minutes but she was not really feeling the heat. Then I ran to the dentist and came home to finish up my workout.

Remember how I told you all my knee has really been bothering me? Well, for the past week I have really been focusing on resting it. The last time I really ran was when I did the 5K with my family and then tried to do 1 mile with P. Usually I can run much further without it bothering me.

I did an easy 2 mile run and it felt great! Resting it was the best thing for it but I am going to continue to build back up slowly. I walked the 3rd mile and called it a day!

Dinner (6:30pm):

I had originally planned to cook dinner for Dad and I but he had to go to my little sister’s parent class party thing and I walked in from my run with a text from my high school Young Life leader asking to get together! We went to dinner at Majestic Burger and I had my favorite salad there.

Chopped salad with a huge piece of talapia on top. So yummy and I ate every bite.

As always I LOVED catching up with Nenon!

Dessert (8pm):

I came home and had a dark chocolate sugar free Jello pudding and a big ole mug of green tea!!

I got to catch up on the phone with Elizabeth (she is in Chicago!!!!) and I watched some Gossip Girl.

Great day even though I am a huge cry baby!

I am going to continue running my errands and getting organized for DC today. I am getting really excited to go!!!

Have a fantastic Wednesday!! πŸ™‚

Hey friends!

Hope you all had a fantastic weekend. Mine was AWESOME! Filled with tons of family time, yummy food and just relaxing. Oh… and the MCAT IS OVER so I finally got to spend longer than 2 hours in a day with P. Sadly that only lasted for 48 hours because he left for the summer this morning 😦

I was so sad to see him go this morning. I went to tell him bye early this morning. I cried like a baby. I really do not know why. We hardly ever get to see each other during the school year but for some reason this goodbye was really hard for me.

Nothing that a little lunch at Keifer’s with my best friend EVER, Katie, and later a GIGANTIC Diet Coke and chocolate chip cookie can not fix πŸ˜‰ I do not drink soda often but when I “need” one, it really hits the spot. Anyone else?

So, back to this weekend… What were we up to?!

After a long walk with P and Gumbo…My grandparents came in town for the weekend and we had a family dinner at Bravo to celebrate Rollins graduation.

Rollins blowing out candles for graduation HAHA.

Afternoon fro yo date at Menchie’s πŸ™‚ (Can you guess which one is mine? You KNOW I am not the one who went and got a cup of honeydew sorbet…)

Graduation night!!

Ro was off to “Grad Night” with the rest of her grade…We had dinner with the family afterwards and then Mom, Dad and I went to have a drink at Bravo on the patio. Should we just mark our name on this table?! We love Bravo if you can not tell!

After wishing P good luck on the MCAT (Would you not LOVE to see your cute girlfriend at 7:15 am in her oversized pjs, glasses, hair a mess and zit cream still on her face run up to your car at the testing center to wish you luck… that would completely calm my nerves ;))… I came home to a yummy waffle breakfast with fruit and coffee with my grandparents.

P brought me gorgeous flowers as soon as his test was over and then we went to celebrate all of his hard work with beers and Pita Motz at Keifers… Grilled Chicken Gyros for both of us πŸ˜‰

We took the longest nap and then date night (FINALLY!!) at Walker’s…I forgot to take pics! Oh well!

We were both so full we each got a desert to go… again, guess which one is mine?! YES! The Big Bear Brownie with got fudge sauce and ice cream!!

Mom and Ro left for her senior trip in Mexico… don’t ask why we were not invited?!!!! And Daddy went to church and left us at home to sleep in so I made Becca and I “healthy french toast” (whole wheat bread dipped in egg whites + splash of almond milk) and top it with a little butter and sugar free syrup + fruit. Rebecca does not like strawberries or blackberries. I can not even believe that we are related considering I will eat any and all fruit in an uncomfortable amount of huge quantities.

For lunch I cooked these Talapia Burgers for Dad, Parker and I and some sweet potato fries on the side. It was so yummy!

P’s lunch!

My lunch!

The rest of the afternoon while Parker packed, I went to lay out with my BFFFF Katie!!

Once he was all packed up, I went to his house! We sat outside for a while and had wine on the porch and P’s mom made his favorite meal for his going away. Red beans and rice, bread, caesar salad, grilled shrimp and sausage! So, so, so delicious. She is the best cook! I went back for more of everything. Of course.

I am going to miss him SO much. And I am really going to miss this sweet face.

Some of you have asked where Parker will be… He is the camp EMT for a Young Life Camp in Saranac Lake, NY. I also worked there two few summers ago and it is the most beautiful place I have ever been to. I am SO proud of him and praying nothing too traumatic happens to a camper!!!

After all of the great food this weekend, I am definitely ready to get back on a normal eating routine!!!

I just finished running errands and am about to curl up on the couch and watch some TV and then possibly squeeze in a quick workout?!

Hope you all have a fantastic Monday afternoon!

Rollins: On Your Graduation Day

Hey friends!!

As I sit here this morning it is hard to believe that in a few short hours I will be at my middle sister’s GRADUATION ceremony from high school.

It seems like yesterday, the best thing in the world happened to break my streak of being an only child.

And then Becca came along and our little world was complete (this picture describes us perfectly).

Every girl should have a sister. Because while we DEFINITELY have our moments…

We love each other no matter what and know each other better than anyone else.

Oh… and let’s not forget to mention that we might be in the biggest fight of our lives, but I DARE someone else to try and mess with one of us.

Ro- You will never know how proud I am of you!

I am so proud of your accomplishments…

… and for following your dreams and never giving up!

But, I am more proud of the person you have become.

You will never know how much you inspire me. Even if you do not express it as much as me πŸ˜‰ your love for people, animals and everyone around you shines from the inside out.

You have a heart of gold.

I know you will be far away next year… but as Grandaddy said last night, “California isn’t going to know what hit them!”

We are all so excited for you!

Remember, I am just a phone call and a plane ride away.

Never give up. Don’t forget who you are and who you want to be. And most of all, don’t forget how much Mom, Daddy, Becca and I (and all the animals, of course) LOVE YOU!!

WIAW {StarkVegas Edition}

Good morning!! πŸ™‚

Hope yall are having a fabulous week so far. Mine has been filled with, well not a lot!! Haha I seriously love being home and not having an agenda. I am sure that by this time next week I will be stir crazy to get to DC but for now I am happy as a peach πŸ™‚

So when I left you all it was Mother’s Day… We had a great time celebrating THE BEST MOM IN THE WORLD!!

On Sunday afternoon Parker had to go up to Starkville to get a few things from his house and he wanted a change of scenery to study for a day so naturally even though I had to clear out my busy schedule πŸ˜‰ I tagged along with him.

So… I decided for today’s WIAW I would do my eats over the past two days because they have been so yummy!! One of our favorite things to do together is eat and drink. I know that sounds weird but we love going to try new fun places, going to old favorites and cooking together.

As always, thanks Jenn for hosting this!!

Sunday night:

We left around 5:00 and before we got on the road, we went to a new fro-yo place near Parker’s house with his parents! Is this not the smallest most measly pitiful cup of fro yo since mine is usually overflowing from the top you have ever seen? I KNOW. But I knew we were going to dinner so I made this my first appetizer!

When we got there we unpacked and headed straight to The Veranda to eat! I love this little place. I have only been here for lunch but it was great for dinner too. Of course we started with drinks (red wine for me and beer for him) and spring rolls.

For my meal I ordered the Veranda Chicken and he had the Cajun pasta. Mine was delicious! A huge grilled chicken breast + plenty of veggies= a happy Anne. I tried to get both of our meals in one pic, it didn’t really work out haha.

Monday morning I just had a giant yogurt mess and the picture looked so gross I was afraid you all would quit reading my blog if you saw it, so I spared you… your welcome!! While he studied I went walking with one of my best friends from high school, Lindsey! I love catching up with her and we always pick right back up where we left off. After our walk, I ran by Newks to grab us lunch and we ate outside so P could see the sun for the day haha.

Newks Q for him + ceaser salad and half of a Newks Club for me + a simply salad and we both had iced tea!

Enjoying his sandwich?

After lunch I lounged around and then went to the grocery to get stuff to cook that night! When I got back he was FINALLY done studying for the day so we went on a really short run. My knee is still killing me so I guess I am just going to have to keep resting it even though that is going to drive me crazy, I would rather it get better and in the meantime I will just have to get creative with my workouts.

I immediately showered and got in my PJS (yes, it was 6 pm) and we poured two glasses of wine and got to work on dinner!

I made baked portobello fries for an appetizer because they are his favorite. I just used sliced portobello mushrooms and toasted some whole wheat bread, blended those up for bread crumbs and mixed them withΒ parmesan cheese parsley and salt and pepper. I whisked two eggs and dipped the portobello strips into the eggs and then the bread crumb mixture, baked them at 425 for about 15 minutes and served them with this Parmesan and black peppercorn dip that I found! I was so proud of myself. They were easy and really, really good!!

For dinner we used a Crispy Salmon with Creamy Basil Noodles recipe from Jessica at HowSweetEats and followed it almost exactly but added a few things to our liking. We will definitely be making this again! It was amazing and the salmon came out perfectly. I also roasted some asparagus (salt, pepper, olive oil) and dinner was served. It was SO. YUMMY. and we were stuffed.

My dinner!

P’s dinner

Tuesday morning we were up pretty early to get on the road so he could get back home to study. On our way out, we went to City Bagel. This is my favorite place to eat breakfast ever!! I am not a huge bagel person but I love their bagels. I had a whole wheat bagel with egg whites + strawberry jelly + strawberry cream cheese and COFFEE.

P had their bacon, egg and cheese on some kind of bagel I can not remember.

But it was a good way to kick off Tuesday!! And even though we were only gone for less than 48 hours, and he studied the. entire. time. it was really nice to just be alone before he leaves next Monday and we do not see each other all summer 😦

When I got back to Jackson I had time to do a 10 minute workout. With my knee, I decided not to run and did a interval incline walk on the treadmill. Not bad for 10 minutes! I was rushing to get ready because we were taking family pictures because that is all my mom asked for for Mother’s Day.Β  It was really fun actually and no major knock down drag outs (a major accomplishment for 3 girls!!).

My eats for the rest of the day were the usual. Smoothie, banana + almond butter, almonds, etc. After pictures, we went to dinner at Papitos and all shared the chicken fajitas.

If you are still with me, I am sorry for talking your ear off about my life! I definitely had some great eats but ready to get back into my routine. I have definitely been eating like I am on vacation, but I am not going to worry about it or be too hard on myself.

Hope you all have a great Wednesday FILLED with yummy eats!

The Best Mom in the Whole World

Happy Mothers Day to the best mom in the entire world!!

I literally do not know what I would do without her! The other day in the kitchen at Kappa during our daily chat with the cooks, Pam told us “Be good to your mom, you only have one mom so be good to her because she is all your got.” That will stick with me forever.

I really am so lucky to have my mom!

She is the rock, the glue and the foundation of our family. Whenever people compare me to her, it is the biggest compliment I can ever receive.

When everything seems like it is falling apart, my mom still manages to keep it together. She is more beautiful on the inside than on the out, which is hard to imagine since when she walks into a rooms every single head turns.

She supports us in all that we do and never lets us give up on our dreams.

My mom has taught me what it looks like to be a mother. She is my best friend, my role model, my mentor, (most of the time my therapist hahaha) and the one person I KNOW will never let me down. I hope that one day I can me half the mom she is to me!

Thank you for all that you do for us Mama! I love you!

Slowing Down at Home

Good morning friends!!

Sooo.. last time I left you, I was about to take a day to do nothing which is exactly what I have done for the past 48 hours. Whenever I come home my body kind of goes into shock because I finally stop and all of my tiredness hits me. Does this happen to anyone else?

Well anyways what have I been up to?!!

Thursday was spent catching up with my grandmother over lunch at Newks, laying out, and having dinner with my best friend Katie at Nagoya!! Originally I had been craving sushi all day but when she mentioned the salmon teryiaki, I immediately changed my mind. Great dinner but even better catching up with her!!!!

Friday morning I slept in, had a nice big bowl of cereal and coffee with my mom, baked these delicious cookie dough energyball bites (recipe coming soon!!) and kinda lounged around before I decided to sweat a little and do some yoga.

I took a rest day on Thursday because I was just really tired and my knee is starting to hurt which usually means I need to chill on the exercise front. Yesterday my knee did not feel all that much better but yoga was perfect. I forget how hard yoga with my girl Jillian is though, my arms are feeling it today!!

Around noon I packed up a little lunch for P and I and we headed to the beach area by the lake in his neighborhood to let Gumbo play. He has been studying for the MCAT and needed to get outdoors and needless to say, Gumbo is going stir crazy watching him study. She was having a ball playing by herself but THEN 5 new little friends came to play with her and she was in heaven. She loves little kids and it was nice letting them entertain her while we ate πŸ™‚

Half of a spinach wrap for me + turkey + tomato + sprinkle of parmesean + spinach leaves+ mustard and a side of strawberries and blackberries. Whole wheat sandwich for P + turkey + bacon + avacado + Havarti cheese + hummus + spinach leaves and a side of apples and cracked pepper chips (okay, I helped him eat the chips!).

Last night I was in my PJS by 6. It was raining and just you know, one of those nights. Dad picked up salads to go and P watched Gossip Girl with me! This morning my daddy, sisters and I were up bright and early for a 5K. We had SO much fun and we got completely soaked when the downpour came. My dad beat us and is very proud of himself to say the least, let’s hope he is moving tomorrow… he looks so happy in the picture below……..

Don’t you wish you were a part of my completely normal family? After the race, we went to Primos for breakfast! I had two eggs over easy + wheat toast + fruit + turkey sausage and COFFEE and Dad ordered blueberry pancakes for us to all share (HEAVENLY!!). Such a fun way to start the day πŸ™‚

Mom and I are about to go see a new movie and I am hoping I can talk her into some new running shoes?!? Maybe?!

Finally HOME!!

Hey friends!!

It has been almost a week! Oh my goodness:) Well due to exams and moving, etc. I had no time to blog. BUT I am so excited it is finally summer and I will be able to consistently blog all the time!!

I got home yesterday afternoon and was so excited to see my family, Parker and his parents and SCOOOOOTTIE (my dog, it’s fine).

Just wanted to pop in and say I am alive… Today I plan on doing….. NOTHING and I could not be more excited. The end of the semester was crazy and I really just want a few days to relax. I get so annoyed when people talk about how they need to “take a day to relax” and now I am saying that.

Hope you all have a happy Thursday! It is almost the weekend!!
