This Week’s Set Up

Hi there!

How are you guys?! I hope everyone had a MARVELOUS Monday 😉

Yesterday when I left you there was still some things I wanted to share… but the length of my post was getting a bit out of control!

Have you forgotten that a major part of this blog is about nutrition and fitness?! Haha I sure have… not that I am complaining… there has just been too many other exciting things going on. However, that is NOT to say that I have not been focusing on my workouts and clean eats, I definitely have, but I have just had other things going on that I wanted to share.

I kinda want to start doing a little weekly set up of what my week will look like. I may not post about it every week but I think by sharing what I hope to accomplish that week with you guys… it will keep me on track.

So let’s talk a little bit about has been going on around here healthy living wise!! Since starting Best Body Bootcamp, each week Tina encourages us to pick 2 goals for that week.

Mine last week were:

  • Eat clean and fit in exercise when possible but enjoy myself and the time I had with my grandparents! Goal accomplished! I started eat day with a healthy breakfast and exercise and then enjoyed myself but I never felt like I went overboard.
  • Be in bed by 10. Asleep by 10:30. Done and done. This really is no problem for me seeing as how by the time 8 pm hits… all I want to do is lie in bed and read or watch Netflix. I know I suck but whatevvverrr.

This week my goals are:

  • Eat clean, eat clean, eat clean and get in at least 5 really good workouts. 
  • Foam roll and stretch more. This may seem like a silly goal to you BUT my muscles are so stinking sore and they are really missing my Bikram yoga… I think my foam rolling and stretching more this will really help!

How am I going to accomplish these little goals?!!

1. Meal Prep.

On Sunday I did some serious meal prepping for the week. Since I am leaving DC on FRIDAY (Can you believe how fast the summer has gone by?)… I really needed to  get rid of a few things in my freezer/ fridge.

A few weeks ago, I saw this recipe “Kitchen Stash Supper” from Iowa Girl Eats. I love every single recipe she posts and this one I especially could not forget because it was about making dinner with stuff you already have. I started with making a big pot of whole wheat penne pasta and basically followed her entire recipe step by step. For the 2 tbsp of flour I used whole wheat flour, and for the cheese I used 2.5 Laughing Cow swiss wedges. Look how creamy the pasta turned out.

I think I will have plenty to eat throughout the week. I used every veggie I had in the fridge AKA I cooked up an unbelievable amount of vegetables to much on for the week!

I really like to make one fun little snack for the week and lately it has been amazeballs but yesterday I decided to make some of Katie’s Mini Chocolate Chip Love Bites. For the fruit (since I am not a huge fan of rasberries) I used 3 tbsp of blueberries.

These are really, really good and a perfect after dinner snack. Last night I had 2 (microwaved for 20 seconds) and topped each with a smidge of almond butter. Oh my.

2. Planning my workouts.

Finally I feel like I am getting back into a fitness routine! If you have been reading for a while, you know that it has been kinda off the whole summer because it was clear my body needed some serious rest. I love the bootcamp! It is very realistic and manageable but it is pushing me pretty hard.

Instead of planning out a routine for each day I am just going to set out the workouts that I hope to accomplish based of of the Best Body Bootcamp plan and will do what I am feeling like on that particular day. If I do not get to everything… oh well! Haha

Cardio:

  • 20 min 60/60 HIIT (sprint for 60, jog for 60)–> already done! Ended up doing about 40 min of HIIT Monday
  • 2 x 20-30 min steady state cardio (power walking, jog, elliptical, whatever)
  • Long walk (because these are my favorite and make me happy)
  • 1-2 x 45 min intervals

Strength:

  • Workout A (upper body)
  • 2-3 x Core
  • Workout B (lower body)
  • Yoga (class or DVD)
  • Workout C (full body)

Rest:

  • At least one day of total rest and if I feel like I need more, I will take 2 rest days!!

3. Listen to my body. First and most important priority. My #1 overall goal when I was starting the bootcamp was to listen to my body which is exactly what I have been doing. The last thing I want to do is go into another over-trained phase. No thank you!!

4. Have fun and enjoy life!! This is something I have to remind myself of on a daily basis. Per my very type A personality, I tend to get fixated on one thing and get completely undone if my routine is thrown off (my best friends are like… uh, YEAH). This is something I am really trying to work on!

MIMM {Weekend with My Grandparents and Happy Bday RO!!}

Hey friends!!

Long time no talk 🙂 Sorry I was gone for so long… as soon as Grandmama and Granddaddy came into town I decided to use the weekend as a mini vacation so I took a break from blogging! It was nice to unplug for a few days but boy oh boy I have missed you guys!! And I know I have a ton of blog reading to catch up on today.

Let’s jump right into Marvelous in My Monday. I have LOTS to tell ya! As always, thanks to the beautiful Katie for hosting this!

1. I had such a MARVELOUS week with my grandparents!!

They were in DC for 5 days and it was amazing.The first 2 days their sweet friends from New York were in DC and it was so much fun getting to know them! We had dinner at my favorite Peacock Cafe on Wednesday night. I decided not to pull out my camera at dinner and snap picture of my food since I was just meeting their friends.

Thursday night I met them after work and we went to dinner with their friend’s family at a resturaunt called Old Europe. It was definitely the most different and unique place I have ever been to eat but it was a fun experience. Our waiters were so cute and the food was delicious. (It was a German place and I ordered salmon… I know, I know… but I do not know if Schnitzel is really up my alley!!).

Friday we went to Mount Vernon.

This was something I have never done before and it was awesome. I could have spent days there. I loved the house and the view. I told my grandmother that I certainly would not mind drinking my coffee and having breakfast on the porch at this house every morning while looking out on the Potomac River.

I was in love with all of the colors in the house (we could not take pictures). I had no idea bright colors were so in style. AND I had no idea Martha Washington was such a cook and hostess. I loved the Cooking with Martha Washington exhibit in museum that was all about how much she loved to cook for her family… they even had little brochures with some of her favorite recipes. I think Martha and I would have been great friends and bonded over a love of food 🙂

Overall, it was a great experience and I am so happy we went.

This little extravaganza took up most of the day and we met back up for dinner at Sequoia a really nice restaurant on the Georgetown waterfront.

I had heard some great things about this place and I am so happy we went. I decided to stray from the usual order of red wine and started with the Berry Sangria.

Perfectly refreshing and I want to re-create this ASAP. We also had an appetizer of fried oysters which were really good. I hate raw oysters but love them any other way.


For dinner, Grandmama and I ordered the Rockfish with veggies and Grandaddy had the pan seared pepper corn tuna. I had never heard of Rockfish but it is a light flaky white fish. It had a great taste and the sauce was some kind of lobster cream sauce.Oh my gosh, so good. I forgot to take a picture of the bread but I definitely annihilated the basket while dipping it into my cream sauce. For desert we had the key lime pie.

AMAZING!! It was one of the best dinners with the best company I have had in a long time!

Saturday morning we started at the National Cathedral. It was really, really beautiful. We ended up doing a tour which I am so glad we did because otherwise I would have missedthe significance of what everything stood for. And our tour guide was an expert on the place so he had lots to tell us.

While I was there I saw this banner that really stood out to me: “My House shall be called the House of Prayer for all People.”

I know I do not talk much about my faith on my blog even though it is a huge part of my life…I never want to come off pushy and I am usually very private about it. But this really resonated with me and I wanted to share it. A church should be a place where any and ALL people feel welcomed because ultimately it is not our house, it is Gods. I think sometimes we tend to get so caught up in “church” that we forget the reason for being there… and I really thought this summed up what the first and foremost priority of a church should be perfectly.

After our tour we headed to Tyson’s Corner, a mall I have heard a TON about! We had lunch in the little Neiman’s Cafe as soon as we got there. I forget how much I love these dang popovers with strawberry butter. Don’t worry, I had 2 🙂 (I am sure you did not expect any less…) and then had the grilled chicken wrap on wheat that came with a side of fruit and salad. I ate every last bite. Sorry I was haaannnggrryyy.

Grandmama and I walked around for a little while and while we did not have much luck, it was fun just looking! She got the cutest pair of royal blue little jeans… I hope one day I look as good as her in skinny jeans… or just as good as her period. I made her try on this Burberry coat for fun… How CUTE!!

After our shopping trip, I think Grandaddy needed a drink. We headed to the rooftop of the W Hotel and had a drink. It looks out over the White House and all of the monuments/ museums… you can definitely see everything form up here.

It was a little too sunny and hot so we went next door to the little bar at the hotel Willard. It was perfect! We ordered appetizers (crabcake sliders, spinach and artichoke dip, and margarita pizza) which were so filling it turned into dinner. I left stuffed. Again.

Sunday morning we had planned to go to church but found out there was no air conditioning in the church, and it was way too hot outside so we went and walked around neat the White House instead. We ended up stopping in the visitor center and watching a movie on the White House. I am honestly so happy we did this… we got to see every room in the White House and it gave a description of each room and its meaning. Grandmama and Grandaddy said it was better than the actual tour they had a few years ago.

We headed to Old Ebbitt Grille for brunch/ lunch. It is right by the White House and has been a very happening little place for many years. I was kinda in the mood for something plain since I had eaten SO many rich things over the course of 5 days… so I stuck with the grilled chicken sandwhich (sans the bun) and fruit.

We still had a few hours to kill before they had to be at the airport so we went to the National Portrait Gallery. It was SO beautiful and we did not even get to see half of it… but I am glad we did it and I want to go back!! I could look at art work for days.

I was so sad to see them go. We had SUCH a FUN weekend! It was amazing to get to spend one on one time with them and I am so happy they came. I will always remember it as one of the best weekends. I am a lucky girl to have two sets of such incredible grandparents. I went to bed last night feeling very happy and very blessed.

2. Happy Birthday Ro Ro!!!!!!! I am so so so proud of you and I love you so much. I can not believe you are 19!!!! I am excited to see where life takes you… I know you have a very exciting journey in store 🙂 See more about just how much I love my sister in this post.

Yesterday Rollins posted this about my mom on facebook and I wanted to share it with you guys because this could not be more true. I can not tell you how lucky we are to have the best MAMA in the entire world!! (And Dad too of course!).

WIAW: {Summer Staples}

Well hello there!

Can ya believe it is already Wednesday?! Me either! I am super excited for this week because my precious grandparents will be in town with their friends. I am looking so forward to seeing them and spending time with them!

Well… this week has been quite a whirlwind and the past two days have been crazy! My eats have been super quick and random (except for my salmon teryiaki Monday night!!) and to be honest I do not really even have any pictures of recent eats over the past few days for WIAW. Soooo… I decided to tell you guys about what my favorite foods have been lately ESPECIALLY in the hot summer months! Thanks Jenn for hosting this.

While I am ALWAYS more of a meal person than a snacky person… in the summer I seem to eat more throughout the day in smaller portions and in the winter I just eat 3 giant portions. Do not ask why… I could not tell you.

Snack plate 🙂

1. Fruit. When the temperatures are blazing outside there really is nothing better than a giant bowl of fruit. I especially love any and all berries (I lied… I HATE rasberries) and melons and grapes in the summer. I eat a lot of fruit anyways, but in the summer I seem to incorporate it in just about every single meal AND snack. I am on a BIG white peach kick lately after finding those beauties at the store the other day.

2. Yogurt bowls. I LOVE yogurt bowls (especially with Chobani!). They are so refreshing and you can do just about anything with them. Fruit, granola, chia seeds, chocolate chips, whatever!!

3. Green Strawberry and Banana Monsters. Can you really beat a smoothie when it is 788918219 billion degrees out? I have had a few of you ask me what my smoothies are like so here is the low down on this one:  1/2 frozen banana, as much spinach and frozen strawberries as your little heart desires, a container of greek yogurt, water, chia seeds…. when I go home I am looking forward to adding a splash of OJ to them… but for now I am too cheap to buy OJ because it would take me a year to go through the whole bottle 😉

4. Turkey sandwiches. Wraps, whole wheat bread, mini bagel, whatever. I LOVE turkey sandwiches and especially in the summer with lots of spinach and tomato. They remind me of my mommy and it makes me happy.

5. BBQ Pop Chips. You may be thinking… these are “not as good for you as you think.” I am 110% aware of that but they are a trillion times better than what I could be eating. And speaking of turkey sandwiches… mine always taste better with a BBQ chip. Just saying.

6. Tart fro-yo. I never though I would say it… Baxter are you reading this??? I LOVE the tart kind of fro-yo. I used to only eat the kind that tasted like ice cream.. but my roomies and new friends this summer have gotten me hooked on this stuff.I LOVE IT. Good thing we have a sweet green .1 miles away from our house?

7. Salmon with roasted sweet potato and brussle sprouts. I think this may be my favorite summer dinner. The combination of everything is heavenly and not to mention, pretty darn healthy?! I think the second best summer meal is homemade turkey burgers on the grill… which I have only had the pleasure of having once this entire summer. I just hate buying a whole thing of ground turkey for one… and it is kinda sad to grill alone. Mom, Dad… my homecoming celebration meal August 5th???? 😉

8. Anything and everything GREEN. Stuftmama I am convinced you are a complete genius.

9. Quinoa bowls. Oh what you can do with these little things!! You can put quinoa in your salad for some healthy carbs, make some protein packed “fried rice”, make a cheesy chicken quinoa bowl, etc. . Perfect if you want to cook up a big batch on Sunday and then just add it to anything and everything you eat especially when it is just too hot to cook and labor over a 5 star quality meal.. okay not that there are any 5 star meals being made over here but ya get my point.

10. Giant cereal combos. Sick of seeing this?! sorry 🙂

11. Fitnessista’s amazeballs.  I make these with 2 tbsp of Vega chocolate smoothie mix and add a tbsp of chia and 2 tbsp of oats. Delicious! My batch usually makes about 6-7 little amazeballs. A PERFECT snack to kick my sweettooth to the curb or before a late afternoon pre-workout snack.

12. Some foods I eat almost everyday no matter summer or winter: Coffee, dark chocolate, almonds, chia, almond/ peanut butter, anything PB + banana, mint chocolate chip ice cream, pizza, Mexican (I MISS my Tex Mex)…. oh you know… JUST ABOUT EVERYTHING!! And wine and margaritas. Does that count as food?!

Fitness this week:

Per every other WIAW this month…. I am going to talk about my Fitness! Woo! Like it has been this whole summer… nothing too crazy or exciting going on around here on the fitness front. Just still kinda listening to my body and doing what is best for it that day.

However, I DID join Tina’s Best Body Bootcamp that started on Monday!! I am absolutely loving it already. Her workouts are awesome and very realistic yet challenging. I also love the facebook group and all the support that you get from everyone doing it (with 500 participants… it is pretty insane!!). I think it is the perfect little push that I needed to get back into the groove of things. I am also moving things around to fit my schedule best!

My workout schedule for the week looks like this (hopefully!):

Monday- I did Workout A (burning arms!) + 20 min HIIT running on the treadmill (60 min spring, 60 min jog, alternating)

Tuesday- I got home from work so late and I was so dang HANGRY so I set out for a 25 minute run and called it a day. It was a “20 minute steady state” cardio day for the Bootcamp + Workout B so I am going to do workout B today!!

Wednesday- Workout B (lower body) + 20 min walking intervals + core

Thursday- 45- 60 min cardio + core

Friday- Workout C (full body strength) + intervals

Saturday/ Sunday- Totally depending on what my weekend with my grandparents looks like! If I do not have time for a workout, who cares! I am thinking maybe a long walk + a little yoga on Sunday?!

I am leaving you all with this because today what I am craving most is love with this lil gil. I miss her more than anything in the world!!! 10 days!

Love Mint Chip tip for the day: Never forget your friends, family, and overall mental health and well being are more important than any silly diet or workout. Don’t miss out on life because you are too worried to slip up. And if you do slip up, take a breath, go on a walk, and fix it.

Bye Bye Sushi Craving

Happy Tuesday!

Hope all of your Mondays were off to a marvelous start for the week! I had a really, really fun day exploring around DC with one of the other interns at NBC (more details to come soon!!).

Last night I was craving sushi. It seems like every time I eat sushi (I ate it Saturday night), I just keep craving it all week! However, my grandparents are coming this week and I know I will have plenty of yummy eats out so I decide to make something at home. I am also trying to clean out the freezer/ fridge since I have less than 2 weeks here. Gosh, this summer has FLOWN by!!

A few weeks ago I saw this recipe from the cutest Meg about a “deconstructed” sushi salad. I have some brown rice I need to eat up… So I took her idea and went with it 🙂 It turned out to be more of a salmon teryiaki than a deconstruced sushi salad because I realized I did not have really any of the right ingredients. I WILL be making this salad though… it looks amazing check it out!

But mine still turned out great and killed my sushi craving. Check and check.

Salmon Teryiaki

What you need:

Salmon

Brown rice

A bunch of Veggies (I used asparagus, mushrooms, onions and spinach)

Soy sauce and teryiaki sauce

How to:

1. Marinate the salmon and veggies for about 1 hour in teriyaki sauce (as much or as little as you want).

2. Cook brown rice according to package directions.

3. Sautee vegetables, set them aside when done.

4. Sautee salmon (about 5 min each side) and place on top of veggies when done!

5. Drizzle teryiaki + soy sauce over everything (if you want more).

6. Enjoy!

LoveMintChip tip: My veggies and rice got a little cold while waiting on the salmon to be cooked, so I popped it in the microwave for a minute right as the salmon was almost done (I HATE cold food!!).

MIMM: {Happy Birthday Lil Gil}

Hey friends!

How is life?!! anything new?! I can not believe how fast the weekend flew by and that I only have ONE more weekend left here in DC!

Since I missed last week’s Marvelous in My Monday, I wanted to make sure I got to participate in the fun this week. Thanks Katie for hosting this!

1 . My weekend was absolutely MARVELOUS! If you are not caught up… I went to the beach on Friday with some of my intern friends from NBC. We had so, so, so much fun and it was a great little get away. Even though the weather was cloudy Saturday, we had a wonderful time hanging out together (and escaping the DC heat). The town is so stinking cute and local. Plenty of great talks, laughs, drinks, eats and I even got in a nice little run Saturday morning on the boardwalk! Katherine’s house was amazing and it was so nice of her to have all of us. A perfect weekend!

2. Speaking of great eats… I have officially discovered the MOST MARVELOUS ice cream flavor ever invented. Mint chocolate chip with cookie dough pieces and crushed oreos. I know what you are thinking. It can not be real. ME TOO!!!!!! One day Parker will open an ice cream store just for me and have this flavor 😉 (It’s fine that he does not know that is in his plan yet…)

3. I start best body bootcamp TODAY! I have been wanting to do this ever since the last one and I am excited to have a little change in my routine. I am going to obviously continue listening to my body and not going to push it… but I am really pumped to have something new! The first 2 weeks (first phase) looks MARVELOUS and almost 500 people have signed up so there will be plenty of support in the blog sphere!!

4. The most marvelous thing for last: IT’S MY GILLLLLLSSSS BIRTHDAY!!!!!!!!! Happy Birthday Mally GIL! I love you so much. Finally legal 🙂 I hope you have the best day ever! Wish I was celebrating right there with you!!!!!! XOXO thanks for always being such a good friend! YOU DA BESSSTTT! I am so happy you “picked me” (HAHAHAHAHAH!!) You really are such a great friend and I can’t thank you enough for always being there for me!

Saranac with P: Part 2

Hello sweet friends!

Happy Friday! Anyone else pumped that it is the weekend?!! I am SUPER excited. I am going to a precious girl who I intern with beach house and am beyond excited to have the weekend to hang out with all my friends I have met at NBC outside of our “intern cave” as we like to call it.

When I last left  you on Wednesday… I promised another post about the second part of my trip to visit P.

On Sunday morning when I woke up I was SO sad. I couldn’t believe it was already time to go 😦

We headed to the kitchen to help out with breakfast and then I was off to the airport. I downed a stack of chocolate chip pancakes on the car ride there and even  that did not make me feel better!! He dropped me off and had to get going because Sundays are his busiest day. I was a complete basket case. Crying. No… SOBBING.

After waiting around for a few hours at the airport (my flight was delayed 3 times) the lady announced it was CANCELED. Oh.. more tears. I was so, so, so happy! Then she told me everything was booked until Tuesday!! FINE by me.

One of the sweet girl interns P works with came to get me and I was back at camp!  The whole day was a whirlwind and Parker was working like crazy. I just kinda hung out and tried to help him as much as possible.

Finally dinner rolled around and much to my surprise it was BIG COOKIE. Have you ever been to Young Life camp and know what big cookie is? It is the famous desert. A giant skillet cookie topped with ice cream and chocolate sauce. I don’t know what they put in this thing but it is crack. Happy Anne.

That night I got to see him in action with a few of the kids as the camp EMT. He is SO patient, calm and understanding. He must have seen this one girl 4 times in one day. I would have given her a tylenol PM and told her to go to sleep… (good thing I am not the one entering the medical profession)… but he just kept  talking her through things and never got his feathers ruffled.

Even in a pretty large emergency that happened Sunday night (don’t feel comfortable sharing) he was so calm. He will literally sit with a kid crying over  a stubbed toe for 20 minutes explaining to him why he feels the way he does and then will tell him to come back by later so he can check it out again. He remembers everyone’s name. Incredible. Sweetest thing I have ever seen ❤

He definitely has a gift and it was incredible to get to see it and be a part of it for a few days.

And apparently some of the high school girls who are working there for the month have been making up excuses to go visit him in the infirmary 😉 Haha.

On Monday he had to be up super early for a meeting so I went on a little run. Nothing special, just 2 miles but it felt good to move! It is really hard for me to run here because of my asthma with the super high altitude. The air is so thin!

We hung out in the infirmary for a good portion of the day (exciting!!) and then I helped out in the bakery that afternoon. It was so much fun! Before dinner P and I went on a short little boat ride around the lake. The weather was awesome. Nothing too special but just nice to be together. Saranac lake is so pretty gosh!!

Monday night after dinner he said he had a surprise… PARASAILING!! It was so much fun. I did this 2 summers ago but had forgotten how beautiful it is!



I was not ready to go on Tuesday morning but felt much better about leaving than I did on Sunday!

Needless to say it was the best 5 days of my summer and I am so happy I got to spend it with my best friend in the whole world!!! Sorry for the gooby quote but this explains us perfectly 🙂

And I think that is about it for today.

WIAW: {Our Perfect Day}

Hey friends!!

Well… I am officially back! I left Saranac yesterday and got back late afternoon. I was going to do a post last night  but decided I would just incorporate it into WIAW.

I am going to do a 2 part post on my trip to see P because there is NO WAY I could fit it all into one post. It was the best 5 days EVER!!

Since it is WIAW, I am going to tell you all about our Saturday “surprise date day” because being the two foodies that we are, you know a lot of good eats were consumed.

Let’s back up to Friday afternoon when I finally got there. My flight was delayed, I got on the plane, down the runway, had to get back off, etc. etc. etc. It was a disaster and I was crying like a baby. I am sure everyone in the airport thought I had something severely wrong with me but I thought I was not going to be able to get there. I am a treat.

Fridays are P’s slower days (and let me tell you…. he is BUSY on the other days….) so it was nice because we got to walk around and just enjoy camp and spend a ton of time together. Saranac is one of my most favorite places on earth and it was so great to be back and see familiar faces and also meet the amazing other people he has been working with all summer.

We had a delicious dinner + desert (if you have ever been to a Young Life camp… you know the food is incredible) and got to hang out for the rest of the night. I went out with the boys to wake surf and then P and I went out on the boat to look at the stars.

 I forget what the sky looks like here at night. P said it perfectly, “it is uncapturable”. Such a great night!

Saturday morning I was told to “be up at 8 am and wear your uniform.” Oh… my uniform is what P likes to call black lulu leggings, a big t-shirt, and tennis shoes. Normal. He also told me to pack something nice for dinner! Since Saturdays are his day off… we left camp for the day and our adventure began.


Breakfast:

I was greeted bright and early with a cup of coffee and then we hit the road to Lake Placid for breakfast. We went to this precious place called “The Breakfast Club.”

I had a greek yogurt bowl with homemade granola and fruit with a side blueberry pancake. I couldn’t pass up the maple syrup (it is super close to Canada so the syrup is to.die.for). He had some breakfast potatoes with ham and dippy eggs on top. It was such a good meal and I hope to come back.

Fitness:

In lieu with the theme of WIAW Fitness, we went to a place called the Flooms and climbed/ walked around. It was beautiful and SO much fun! We would climb, sit, talk, climb again, walk. I am not going to lie, this was a great little workout and we both worked up a pretty good sweat.

After we left here we drove to Whiteface Mountain , the 5th highest mountain in NY State and one of the High Peaks of the Adirondack Mountains. It was so cool! The view was really unbelievable. You could even see Montreal, Canada from a certain point. To get to the top, we climbed about a million flights of stairs… no, really. It may not be considered a work out to you, but I was definitely glad to get to the top 😉

Have you ever had a moment where your breath was taken away? That is how I felt at the top of the mountain. It was the most incredible thing I have ever seen. It reminded me of how lucky I am to have a God that created all of this just for us.

It would not be a day with Anne and P without just a little diva moment…..(or two)

Lunch:

After our adventures, we hopped back in the car and drove down the mountain a little bit to find a picnic table to eat our lunch. We picked up sandwiches at this precious place across from where we ate breakfast before we left.

Turkey for me and some kind of pulled pork for him! The view wasn’t all that bad either 😉

Afternoon:

We were both a little tired by this point and I had no idea what he had in store for us next. He wanted to take me to his favorite spot. So we drove back into the town of Saranac and walked to this gorgeous lake (another activity!!). It was behind a rail road track and it was honestly just so peaceful.

There was hardly anyone around us. We had a blanket and just laid there for a few hours, napped, talked and hung out.

Perfect, perfect way to spend the afternoon! If you can not tell by this post already… we are pretty much one of the most laid back couples together. We genuinely enjoy each other’s company so much and are happy just hanging out.

Dinner:

After a quick change we headed into Lake Placid (near where we ate breakfast) to the Dancing Bears restaurant. We actually had driven by this place earlier and I said, “Oh, that looks like such a fun place to eat!” Little did I know… that is where he had been planning to go.

We sat outside (the weather was amazing) on the patio. By this point we had both worked up a little appetite so we immediately ordered the homemade humus with pita.

For our entrees he had the ahi tuna sandwich with these incredible sweet potato fries… in case you are wondering.. of COURSE I helped him eat them.

I went with the grilled chicken pesto pizza with tomatoes and spinach… YUM! And a salad on the side for some greens.

Desert:

As if the day could get any better, we left dinner and went to Whiteface Lodge. This is one of the most beautiful hotels I have ever been to. We were seated next to a window and could see the Adirondacks and the sun set. It was beautiful!

I was SO full and said there was no way I could eat anything else. Oh… what?? My second stomach grew and I cleared my plate???? 😉

We started with decaf coffees and P ordered the chocolate mouse with fresh fruit. I had the brownie ice cream sandwich (typical). It was two brownie cookie with toffee ice cream in the middle surrounded with chocolate chips and homemade caramel sauce. WOW. Oh, and a scoop of vanilla ice cream on the side.

Let’s just say I went to bed with such a full belly and a happy heart! We never get to be together for an entire day just us and it was absolutely incredible. We had so many great talks and it was so nice to finally catch up and just enjoy each other’s company. This was our perfect day.

Stay tuned for Part 2 of the rest of the weekend! I can not wait to tell you what else we did and how awesome of an EMT P is (no really… I think I loved him ten times more than I already do each time I saw him with a kid).

I have not had the healthiest of eats over the past few days or had a full on workout but let’s be real, all I really cared about was being with Parker and the last thing I was going to worry about was trying to eat super clean or sacrifice time with him to get my sweat on. It was worth every single bite of yummy food and more 🙂

I’m Not Back!!

Hi guys:)

So I am not doing my usual MIMM because I’m not back yet! Just checking in to say I am alive.

My flight was canceled yesterday and I can’t get back out until Tuesday. What a blessing and surprise! Can’t believe I have another day here with P.

Fitness Friday

Hello friends!

So while I am en route to Saranac Lake, NY to see P… I thought it would be fun to put together something a little different for you guys.

Earlier in the week, my friends over at Beach Body reached out to me and sent me a few of their programs to review and share with ya.

*Just so you know, this is not “advertising” for them and this post is 100% my opinion!

I love Beach Body. I think they have some really great products and if money grew on trees, I would buy more. At the beginning of this blog in January, I was just finishing up one of their most popular, P90X.

Here are the programs I chose to review and talk about with you all:

1. P90X: I had a great experience with the program. Although I did not come out of it looking like a fitness model (haha), I could tell a HUGE difference in my strength and endurance and it was a nice break from cardio. I tend to get into cardio ruts and this program was a great way to break out of that. With that said, I MISSED running and my yoga. I like weights but not as much as I like running and yoga. I know P90X has yoga once a week, but I have to be honest with you and tell you that while I usually look so forward to doing yoga, the P90X is not my personal favorite. But I know some people love it, that is just my opinion! I really loved the Plyometrics day… it never failed to kick my butt.

However, my overall appearance did not change that much. I did not do it to lose weight or get ripped, but I was kinda dissapointed I didn’t look all that much different. I did not follow the diet which probably has a lot to do with it. Why did I not follow the diet? It just wasn’t for me. I kinda do my own thing anyways and don’t really like “diets”. It was too much to think about but I am sure following the diet produces the maximum physical results.

Needless to say, P90X was a great 90 days of breaking out of my usual exercise habits. Never hurts to keep your body guessing!

2. Insanity: I am DYING to try this. I have heard nothing but great things about this. Because I know my body and what level it is able to perform at, I do not think I could do this everyday but I think it would be an amazing workout to incorporate 1-2 times a week.

3. Ultimate Reset Cleanse: I have not tried this either but read a lot about it. I am not much of a “cleanse” person and I do not intend to try this, however, if you are looking for a way to kind of “reset” your system, this sounds like a great one. It does not seem like the typical cleanse and along with the 6 essential supplements of the cleanse, you receive a full cook book of recipes to make during the 21 days. You also eat 3 meals a day so it is not a starvation cleanse. May be worth a shot if you are looking to totally “re-boot.” However, a diet filled with clean eats and a lot of fruits and veggies is the best cleanse for me 🙂

1. I want to have a family like Cheaper by the dozen + adopt kids. My cousin is adopted from China and it truly has been a miracle and a blessing to watch her grow.

4. I do not count something without chocolate in it as a dessert. I mean like I LOVE apple pie, strawberry cheesecake, caramel cake, vanilla cake, key lime pie, etc. but like WHERE IS THE CHOCOLATE? Only chocolate puts my raging sweet tooth at rest.

5. I dream of being a health coach on The Biggest Loser or Extreme Makeover Weight Loss Edition. Not to just help these people lose weight, but to be a part of transforming their lives from physical to mental and everything in between. This would be such a rewarding job.

6. I would rather wear no make up, tennis shoes, a baseball hat, and lululemon every day of my life. One day I WILL have a job that allows for this.

7. My love language is words. If you have never read The 5 Love Languages, please go get it immediately. It will make you understand yourself, your significant other, your friends and co-workers so much better. As a words person,  the biggest compliment someone can give me is when they tell me that I am going to be a great mom. Don’t ask why but this literally makes my day.
