My First Foodie Pen Pal

Well hello friends!!

I told you that I had an exciting post for you guys today. I participated in my first foodie penpal for August hosted by Lindsay over at The Lean Green Bean.

This month I was lucky enough to receive a box FULL of yummy goodies from the adorable Sarah. She sent me all kinds of things I had never tried before!

I have to say my favorite thing was the cinnamon raisin spread. YUM. Paired with an apple = perfect snack 🙂

I LOVE participating in this and can not wait to do it again next month. I had so much fun shopping for my foodie pen pal as well!

No idea what a foodie pen pal is?!

Here are all the details from Lindsay’s blog:

-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.

Happy Thursday

Hey friends!

Sorry for the short post. I have a super busy day BUT if you wanna check out my blog post today for The Fit Mustang, I would love to know what you think: Dorm Room Survival Grocery Guide.

But I wanted to stop by and chat with you guys for a little bit because I woke up a happy girl over here this morning. Why?!

1. I am going to see Parker TONIGHT!!

2. I got a new camera! wooohoo! Hopefully you guys will not be seeing too many iPhone pictures anymore. This is the Canon Rebel. I am super excited about it and can not wait to learn more.

3. You know it is going to be a great day when….. we have oatmeal pancakes for breakfast. Obviously I loaded my pancake with bananas + blueberries + flax and chia seeds. Oh… and drenched it in syrup 🙂

I am off to pack, workout, clean, do homework and maybe (okay okay I will…) take a shower!

WIAW: {Refueling is Crucial}

Hey friends!!

How is life? Joining the WIAW party a little late. Today has been SO busy!! Not too many exciting things going on over here, just a lot of school, work, random meetings, you know the usual. I am getting SO excited to go see Parker tomorrow! WOOO!

Yesterday was kind of a fun day of eats. Since I am typically one to eat the same tings every day, I like switching things up a little bit. I was a HUNGRY BEAST yesterday too…because I made a BIG mistake.

I woke up really hungry because I had done Bikram the night before. I stuck to a lighter breakfast knowing I was going to run afterwards and would just eat something after my run. WELL, I got home later than I planned and and had to shower and look presentable for a meeting so I did not have time to grab anything. I came home for lunch SO hungry and this feeling lasted throughout the day. I know that even though I just did a short little run, I forget how crucial it is to refuel with at least something. Never again.

Breakfast (7:30am):

Eggs to order was on the menu at the KKG house. Besides oatmeal pancakes… this may be my favorite breakfast we have. I had 2 scrambled eggs + a piece of wheat toast with sugar free jam and chia seeds + a small tangerine.

Workout (8:45am):

3.10 mile interval run! This was a great little run and because I was alternating between easy and challenging, I was sweating like crazy by the end. I was super sore from Monday’s workout with Best Body Bootcamp + Bikram, so it felt good to stretch my legs.

But this is when I ran out of time to grab a snack. UGH!!

Lunch (11:30am):

By the time I sat down to eat, I was starving!

Salmon salad (teryiaki salmon, cranberries, spinach, apples, pecans) + a side of fruit (watermelons, pineapples, grapes, peaches, strawberries) + a handful of animal cracks for desert. Okay, I had 3 handfuls.

Snack (3:30pm):

I packed a whole weat tortilla + almond butter + half a banana for a snack because I knew it would be a while before I got home and was able to eat.

Pre-dinner (5:30pm):

I was starving at this point yet AGAIN. I grabbed a handful of carrots and also had a small serving of the squash casserole at the KKG house. I LOVE this squas casserole but I already had dinner plans so I just had a little bite!

Dinner (7:45pm):

Dinner at Banditos for one of my best friends Andy!! We met our freshman year in the journalism school and I literally love him to death.

I ordered a skinny margarita and a fajita chicken salad (grilled chicken + bell peppers + tomato + avocado + torilla strips + cheese).

I stayed away from the chip basket until my dinner came but  after I ate I was still starving and I ate entirely TOO MANY CHIPS. Gross. Ugh!!!!! Oh well. Whatever. Ha we all eat too much sometimes.

Desert (9:30pm):

Still hungry. 3 squares of Dove dark chocolate unpictured.

Tuesday Things

It seems like yesterday we were involved in Katrina and I never want to see anyone have to go through that hardship again.

MIMM: {Happy Birthday Mar Mar And I Really Am Back….}

Hi friends!

I am so sorry I am just now posting… I know you have ALL been just anxiously awaiting to read all about my life, right?! 😉

I officially get the worst blogger ever award! But I have just been having so much fun with my first week back and haven’t really had a minute to sit down to chat with you.

Let’s just right into what is Marvelous in My Monday!! As always, Katie you are the best for hosting this!

1. Friends. I have been having a BLAST since I have been back. I went out 4 nights last week which is like A LOT for me but got to see so many people and loved every second of it!!

Love all of my sweet friends!!

2. SMU Ambassador job. I literally LOVE it! My favorite part is meeeting people and getting to talk to them about my school that I love SO much. I could go on about SMU for days. This is a perfect little job for me… even though my outfit is kinda gooby 🙂

3.  Yogurt Bowls. This has been my number one craving for a week! Odd, I know. BUT so yummy, filling and satisfying.

4. KKG Food!!

I save tons of $$ because I usually eat all of my meals here!! And let me tell you they do not lack in taste…Our precious cooks are amazing. They cook everything from scratch and it is all SO yummy!! Mostly everything we have is healthy or “healthified” which is super nice. They really do make such an effort to cater to all of the girls and our picky eating.

5. Bikram is BACK!! I have been twice since Thursday which = one happy girl. I took a picture after class for you guys but it was so tragic, you may never visit my blog again if you had seen it.

7. I get to see THIS GUY in 4 DAYS!!!!

So Much Going On: {Let’s Catch Up}

Hey guys!!

How are you?! Ah so much happening over here lately… let’s do a quick little catch up shall we?!

This past weekend I was in Charlotte, North Carolina for my cousin Jody’s wedding! We had an absolute blast. I saw so many people from home and it was great to catch up with everyone. Such a family filled weekend with lots of love, laughs and tons of fun.

Speaking of family, my little Rollins headed to Chapman University Monday. She is moving in today. I can not believe it. Were we not just 3 years old yesterday?

I had my “last first day of class” yesterday. What?! When did I get to be almost 22 and a senior? I never EVER thought my last first day of class would come.

First day!!

I also shadowed my first tour of SMU yesterday! I am an ambassador this year, and before I can set out to give my own tours, I have to shadow a couple of times. It was so much fun and it is a job that I am definitely looking very forward to. I love my school and have a lot of pride in it so I am excited to share that with other people.

Last night I had a dinner date with my godmother Kate at Zoe’s to catch up. I will never get sick of this place. Parker doesn’t know it yet, but one day he will open a Zoe’s in my backyard where ever we live ;).

If you want a few little reads, my first article for the semester in the Health and Fitness section was published in The Daily Campus yesterday. The cutest pilates teacher, Rachel contributed it. We are still getting settled in our room at the Kappa house and as soon as it is done I will definitely post some pics for you guys. I am so happy to be living in the house again this year! I absolutely love it and there is always somebody to hang out with.

Too Many Emotions + A Guest Post

Hii!!

So, I guess if you read my blog you already know I am a crazy person and my mind runs ninety to nothing. This morning I woke up FULL of emotions. I am sad. I am happy. I am excited. I am overjoyed. I am CRAZY.

Right now I am sitting in the airport and I am bored.

What’s my deal?

1. I am PUMPED that I have a guest post on the CUTEST Natalie’s blog, That Foodie Girl. My very first one! Check it out!

2. I am sad I am not going to Healthy Living Summit this year with some of my new blogger friends. But I am so excited they get to go and blog all about their experience and what they have learned. I WILL be there next year.

3. I am excited, happy, DYING that I have gotten to see my friends! I am sad and throwing a pity party that I have to leave them again, but I can not wait for my cousin’s wedding!! It is going to be a blast.

4. I am grossed out because I have eaten too much and drank too much in the past 48 hours and feel like a puffy balloon. I am so happy that I got to finally eat my Texas Mexican and other favorites… so this is really a catch 22.

5. P got home today and I will not see him 😦 I am actually dying. BUT so happy he will get time with his parents and Gumbo before heading back to school! Let the countdown begin for when I go see him Labor Day!!!!!!

Absolutely none of these are worth being emotional about. I am just nuts!!!

I think that’s all. I went for a short run earlier because running fixing everyone’s problems, right?!! I hope the endorphins kick in shortly.

I am off to read a million magazines (sorry Dad, yes I bought a lot) and enjoy the dark chocolate + skinny vanilla latte waiting for me for desert.

WIAW: {Newks Twice and HAPPY BIRTHDAY ELIZABETH!!}

Hey friends!

How are you guys?! Before I jump into WIAW… I want to give a HUGE HAPPY BIRTHDAY to one of my best friends in the whole world, Elizabeth Ansbro!! I am SO excited to celebrate with you in just a few short hours!! WAAAHHOOO!!!

Beautiful Birthday Girl!!!!!!

Thanks for always being the BEST FRIEND I could ever ask for. Oh and I guess for putting up with my weird habits (Elizabeth and I lived together in the KKG house last year and will live together again this year). She honestly has one of the kindest hearts imaginable and always has the best advice for when I am acting like a completely unstable, insane person! AND she has just landed this awesome job in big D from her internship in Chicago this summer… because she is kinda like a genius, smart, motivated, gorgeous, FABULOUS individual!! Love you more than you will ever know 🙂

I am doing this post super fast so I apologize for any spelling/ grammar errors. I have a lot of packing to do and am leaving in an hour to head back to Dallas! My eats were completely ALL over the place yesterday haha so just bear with me!! Thanks Jenn for hosting this!

Breakfast:

Van’s powergrain waffle topped with almond butter, flax, chia, and my favorite banana + blueberry combination. Drenched in syrup. DUH!!

Lunch:

Parker’s mom is amazing and brought me lunch to their house so I could see Gumbo one more time!

My Girl!!

I had my favorite Newks salad :)…. called “The Newks Favorite” (chicken, pecans, gorganzola cheese, dried cranberries, artichoke hearts, grapes). That salad looks like it is bigger than my head? Oh… wait it is. And I ate every.last.bite. She also brought me some chocolate because she knows this is where my true love lies. Gigantic salad +Mint chocolate goodies = the way to my heart. P… love ya but your mom has you beaten by like 28198219281920 points right now.

Snack:

Unpictured banana + almond butter before a quick outdoor interval run –> It was TOO HOT!!!!

Dinner:

I went to see Becca perform for All Sports Night (where they introduce the sports teams/ cheerleader/ dance teams, etc. for the year) at my old high school! She did amazing. Can NOT believe this baby is a senior! Time has flown by.

My family went to Newks for dinner. HA twice in one day?!! If you can not tell, Newks is a staple where I live. There are several around town but they have the best sandwiches, salads, pizzas, etc. Mom has been raving about their salmon ceaser so that is what I got! It was delicious.

I came home and had a Weight Watchers (No… I am not doing WW!!) Chocolate Bar and then packed my little life away.

Off to put everything in the car and maybe squeeze in like a 20 minute workout?! Better than nothing right? See you guys as soon as I am all moved in and settled!

MIMM: {“Thank You God for Another Day”}

Hello there!

Today has been crazy and I am just now getting around to doing a post! How was your weekend?! I hope it was absolutely fantastic. Mine was filled with much needed time with my bestie and her family, too much food, lots of relaxing and sunshine!

Since today is MIMM, let’s talk about all the marvelousness going on right now. Thanks Katie for hosting this!

1. Obviously, our weekend at the Lake!! Thanks again KP for inviting me 🙂 I even proved to myself I can in fact still wake board… it has been almost 2 years!!

We had the BEST time catching up and I loved spending time with her parents and nephews. Growing up, Katie and I spent every waking moment together and when we get together… nothing really changes. Her Granny and Grandaddy came to the lake too and when I tell you they are so precious, words can not even explain it.

Saturday night we set out for the famous “Sunset Cruise.”As soon as we pulled out onto the lake and were staring at the most gorgeous sunset,  her grandfather said, “Thank you God for another day.” I will never, ever forget that moment. It is something I need to remember every single day. Talk about marvelous?!

2. I will be reunited with my best friends in 48 HOURS!!!! FORTY EIGHT HOURS!!! I am counting down every single second, minute, hour.

3. I am kind of sad to leave home because this little break between my internship and school has been fantastic. BUT I am reuniting with my family this weekend in North Carolina for my cousin, Jody’s wedding! I am so excited to see everyone and I know it will be a great week.

4. My sweet Daddy took Rollins and I shopping today. He absolutely INSISTED that we go. I got a ton of new outfits and a new pair of boots!! He is the BEST!!

5. This picture is my family in a nutshell. Gosh I am going to miss them so much. We had our last family dinner together tonight before we all leave :(. It was so weird.

6. My goals for Best Body Bootcamp this week are:

  1. Enjoy time with my friends and family!!!!!
  2. Fit in normal work outs when possible but not stress about it too much with moving in, etc!!
  3. Thank God for every day. For all of my blessings, my friends, my family, my animals and Parker. I do not deserve anything He has given me and continues to provide.

I think that is about it for now… Lots of marvelousness going on around here!
