I usually do not blog on Saturdays… BUT I had to give a shout out to one of my very very very very best friends…


We have come a LONG way since freshman year… we are even still here today which is a huge accomplishment ;).

Even though we fight like sisters… you are the only one who can tell it to me like it is and vice versa.

I am blessed with our friendship and excited to enter this next phase of life with you.

happy thanksgiving: {pumpkin muffin recipe}

Happy Thanksgiving!!

Today I am thankful for so many things.

My family, friends, pets, health, etc. etc. etc. … the list could go on forever! I am literally SO blessed.

Post Turkey Trot!!!

I am SUPER thankful for…. ALL of you guys!!! To show you how thankful I am… I have a delicious, healthy, protein packed recipe for you!!!!!

Pumpkin Oat Flax Muffins

1 can pumpkin
3/4 cup whole wheat flour
3/4 cup oats
1/4 cup ground flax seed
2 tbsp chia seeds
3/4 cup brown sugar
1/2 tbsp pumpkin pie spice
1/2 tbsp cinnamon
2 eggs
2 tbsp almond milk
6 oz 0% plain greek yogurt

*To make this into more of a dessert, add dark chocolate chips.

**Serve warm with a spread of almond butter, yum!!

Preheat over to 375 degrees. Then, mix all wet ingredients and add in dry ones. Next, bake for 15 to 20 minutes. This recipe makes 12 muffins. Serve warm.

I am an emotional basketcase + a HUGE surprise

Hi friends!

How are you guys?!

I had every intention of doing a MIMM post yesterday but the day went by so fast and was over before I knew it! Why are Mondays always so crazy?

Let’s talk about something. Remember on Friday when I posted that post that was just full of positivity. Yeah… well that feeling lasted for about two more hours.

I had a feeling P was coming to visit this weekend and surprise me but he did not come, and he did not come, and he did not come. I waited ALL day on Friday. Finally at 4 pm I took myself to bed and cried. cried. cried. Did I mention I cried? Like think four year old temper tantrum crying. I am SUCH a drama queen. Then he turned his phone off for like three hours and I am such a psycho I was looking up southwest flights to see if he was on one of them and sending him death threat texts.

Aren’t I am complete treat?! Please do not think this is normal behavior. If this tells you anything my best friend Baxter told me that this is the first time she has ever seen me have a breakdown about me and P in all 4 years. So I am not actually crazy haha.

Ohhh…. here comes 8 pm and I get this text!!

HE CAME!! BEST DAY EVER 🙂 I threw a pillow at him, told him I was so mad at him and then I cried more. My friends thought I had completely lost my mind.

Two of my amazing best friends made dinner reservation for us and we went to Al Beirnet’s and had the best date night ever. Finally! Steak dinner + lots of red wine = a perfect fix for a giant puffy face and swollen eyes happy anne!

Saturday morning we were up bright and early to run our 1 mile together! We actually ended up going about 1.3 because someone (okay it was me) forgot to press start to track our mile. Oops! Then we went to Starbucks and got coffees and headed to meet all of my friends for brunch!!

SO happy to be up on a morning run 😉

We boulevarded all day on Saturday, had way too much fun, went to the Katy Trail Ice House with friends. Shared a cheeseburger and fries. And onion rings. And beer. And then hung out the rest of the day!! Saturday night we watched football and got sushi take out. It was the PERFECT date night!!

It was such an amazing weekend. I am the luckiest girl in the world! And I get to see him again in 2 short weeks!

Now… Lets talk weekly goals. Remember P and I are doing our couch to 8k together so I have to be sure to get that in!!

Eats: Stop taking a bite of everything I see. No… but really! Other than that I am just going to keep normal with my eats. All about the 80/20 rule over here my friends… okay maybe more like 60/40 😉 My meals are great but I am going to try to incorporate some healthier snacks into my day rather than always reaching for animal cracker or sweet potato chips!

Workouts: You may read this and think I am addicted to Bikram. While yes that could in fact be true, you are supposed to practice Bikram a minimum of 3 times per week and more if you can. Some weeks I only have time to go twice and some weeks I have time to go more, it totally depends. So, on weeks where it works with my schedule for me to go a lot I try to fit as much in as possible! Lots of Bikram makes for a very happy me and since I am apparently the world’s greatest emotional basket case right now… I should probably just go live there.

Monday: .5 mile sprint + Bikram

Tuesday: Bikram

Wednesday: 1 mile sprint + 45 minute running intervals

Thursday: 30 min cardio + weights

Friday: Bikram

Saturday or Sunday: 1.5 mile sprint + Bikram + maybe a long walk?!

MIMM: {Happy Birthday Mar Mar And I Really Am Back….}

Hi friends!

I am so sorry I am just now posting… I know you have ALL been just anxiously awaiting to read all about my life, right?! 😉

I officially get the worst blogger ever award! But I have just been having so much fun with my first week back and haven’t really had a minute to sit down to chat with you.

Let’s just right into what is Marvelous in My Monday!! As always, Katie you are the best for hosting this!

1. Friends. I have been having a BLAST since I have been back. I went out 4 nights last week which is like A LOT for me but got to see so many people and loved every second of it!!

2. SMU Ambassador job. I literally LOVE it! My favorite part is meeeting people and getting to talk to them about my school that I love SO much. I could go on about SMU for days. This is a perfect little job for me… even though my outfit is kinda gooby 🙂

3.  Yogurt Bowls. This has been my number one craving for a week! Odd, I know. BUT so yummy, filling and satisfying.

4. KKG Food!!

I save tons of $$ because I usually eat all of my meals here!! And let me tell you they do not lack in taste…Our precious cooks are amazing. They cook everything from scratch and it is all SO yummy!! Mostly everything we have is healthy or “healthified” which is super nice. They really do make such an effort to cater to all of the girls and our picky eating.

5. Bikram is BACK!! I have been twice since Thursday which = one happy girl. I took a picture after class for you guys but it was so tragic, you may never visit my blog again if you had seen it.

Too Many Emotions + A Guest Post


So, I guess if you read my blog you already know I am a crazy person and my mind runs ninety to nothing. This morning I woke up FULL of emotions. I am sad. I am happy. I am excited. I am overjoyed. I am CRAZY.

Right now I am sitting in the airport and I am bored.

What’s my deal?

1. I am PUMPED that I have a guest post on the CUTEST Natalie’s blog, That Foodie Girl. My very first one! Check it out!

2. I am sad I am not going to Healthy Living Summit this year with some of my new blogger friends. But I am so excited they get to go and blog all about their experience and what they have learned. I WILL be there next year.

3. I am excited, happy, DYING that I have gotten to see my friends! I am sad and throwing a pity party that I have to leave them again, but I can not wait for my cousin’s wedding!! It is going to be a blast.

4. I am grossed out because I have eaten too much and drank too much in the past 48 hours and feel like a puffy balloon. I am so happy that I got to finally eat my Texas Mexican and other favorites… so this is really a catch 22.

5. P got home today and I will not see him 😦 I am actually dying. BUT so happy he will get time with his parents and Gumbo before heading back to school! Let the countdown begin for when I go see him Labor Day!!!!!!

Absolutely none of these are worth being emotional about. I am just nuts!!!

I think that’s all. I went for a short run earlier because running fixing everyone’s problems, right?!! I hope the endorphins kick in shortly.

I am off to read a million magazines (sorry Dad, yes I bought a lot) and enjoy the dark chocolate + skinny vanilla latte waiting for me for desert.

How are you guys?! Before I jump into WIAW… I want to give a HUGE HAPPY BIRTHDAY to one of my best friends in the whole world, Elizabeth Ansbro!! I am SO excited to celebrate with you in just a few short hours!! WAAAHHOOO!!!

Beautiful Birthday Girl!!!!!!

Thanks for always being the BEST FRIEND I could ever ask for. Oh and I guess for putting up with my weird habits (Elizabeth and I lived together in the KKG house last year and will live together again this year). She honestly has one of the kindest hearts imaginable and always has the best advice for when I am acting like a completely unstable, insane person! AND she has just landed this awesome job in big D from her internship in Chicago this summer… because she is kinda like a genius, smart, motivated, gorgeous, FABULOUS individual!! Love you more than you will ever know 🙂

I am doing this post super fast so I apologize for any spelling/ grammar errors. I have a lot of packing to do and am leaving in an hour to head back to Dallas! My eats were completely ALL over the place yesterday haha so just bear with me!! Thanks Jenn for hosting this!

My Girl!!

I had my favorite Newks salad :)…. called “The Newks Favorite” (chicken, pecans, gorganzola cheese, dried cranberries, artichoke hearts, grapes). That salad looks like it is bigger than my head? Oh… wait it is. And I ate every.last.bite. She also brought me some chocolate because she knows this is where my true love lies. Gigantic salad +Mint chocolate goodies = the way to my heart. P… love ya but your mom has you beaten by like 28198219281920 points right now.

I went to see Becca perform for All Sports Night (where they introduce the sports teams/ cheerleader/ dance teams, etc. for the year) at my old high school! She did amazing. Can NOT believe this baby is a senior! Time has flown by.

My family went to Newks for dinner. HA twice in one day?!! If you can not tell, Newks is a staple where I live. There are several around town but they have the best sandwiches, salads, pizzas, etc. Mom has been raving about their salmon ceaser so that is what I got! It was delicious.

I came home and had a Weight Watchers (No… I am not doing WW!!) Chocolate Bar and then packed my little life away.

Off to put everything in the car and maybe squeeze in like a 20 minute workout?! Better than nothing right? See you guys as soon as I am all moved in and settled!

MIMM: {Happy Birthday Lil Gil}

Hey friends!

How is life?!! anything new?! I can not believe how fast the weekend flew by and that I only have ONE more weekend left here in DC!

Since I missed last week’s Marvelous in My Monday, I wanted to make sure I got to participate in the fun this week. Thanks Katie for hosting this!

1 . My weekend was absolutely MARVELOUS! If you are not caught up… I went to the beach on Friday with some of my intern friends from NBC. We had so, so, so much fun and it was a great little get away. Even though the weather was cloudy Saturday, we had a wonderful time hanging out together (and escaping the DC heat). The town is so stinking cute and local. Plenty of great talks, laughs, drinks, eats and I even got in a nice little run Saturday morning on the boardwalk! Katherine’s house was amazing and it was so nice of her to have all of us. A perfect weekend!

2. Speaking of great eats… I have officially discovered the MOST MARVELOUS ice cream flavor ever invented. Mint chocolate chip with cookie dough pieces and crushed oreos. I know what you are thinking. It can not be real. ME TOO!!!!!! One day Parker will open an ice cream store just for me and have this flavor 😉 (It’s fine that he does not know that is in his plan yet…)

3. I start best body bootcamp TODAY! I have been wanting to do this ever since the last one and I am excited to have a little change in my routine. I am going to obviously continue listening to my body and not going to push it… but I am really pumped to have something new! The first 2 weeks (first phase) looks MARVELOUS and almost 500 people have signed up so there will be plenty of support in the blog sphere!!

4. The most marvelous thing for last: IT’S MY GILLLLLLSSSS BIRTHDAY!!!!!!!!! Happy Birthday Mally GIL! I love you so much. Finally legal 🙂 I hope you have the best day ever! Wish I was celebrating right there with you!!!!!! XOXO thanks for always being such a good friend! YOU DA BESSSTTT! I am so happy you “picked me” (HAHAHAHAHAH!!) You really are such a great friend and I can’t thank you enough for always being there for me!

MIMM: {Loads of Fun}

Well HELLO all my favorite people!

How was everyone’s weekend?!! I hope fabulous.  I worked on Saturday but I still had plenty of time to get in some relaxation time and good eats 🙂

It is time for another Marvelous in My Monday! Wow, I can not believe how fast last week flew by and I hope this week flies by just as fast because I CAN NOT WAIT FOR THE WEEKEND! Per the usual, I have all kinds of randomness about what is Marvelous this Monday so here ya go! Thanks Katie as always for hosting this.

Banana Bread. I woke up on the 4th CRAVING banana bread. I was tempted to go and get a fat piece of sugary, buttery banana bread but knew that the rest of my day would be filled with tons of sugar ;).  So, I turned to Katie’s blog because I knew she would have something I could work with. I used the recipe from her single lady banana muffin, doubled it (because I did not have a mini loaf pan) plus added/ changed a few things around my own goods. It turned out heavenly (thanks to her!!). You really should try this it was delicious.  Perfect breakfast paired with fruit or for a little snack!

Friday night: Sushi Zen. Oh. my.gosh. My roll was amazing AND with brown rice. Love places who let you order brown rice (it is the little things in life my friends….).Saturday night: Peacock Cafe (my favorite!). Instead of the salmon I have had the past two times,  I had the grilled shrimp ceaser salad. AWESOME choice! And far too many of my skinny frozen margs following dinner….

Sunday: Brunch at Chadwick’s and Sweetgreen fro-yo.


You guys. I can not tell you how much I appreciate each comment, compliment, email, text, etc. from you telling me that you are trying a recipe or workout, love a certain thing about the blog, making a lifestyle change and all of the other encouraging things I get from you on a daily basis . I struggled for the longest time figuring out how to blog in my own voice and caring what others would think about me. The more support I continue to get from you makes my heart smile! Eating Clean and Sweating Dirty.

Love this challenge from Katelyn! It goes along perfectly with My Action Plan (expect an update THIS WEEK!!). I love seeing everyone’s pics from the day of workouts and clean eats. And while eating clean and sweating dirty, there is ALWAYS room for little treats :). I took two days off from working out this weekend because I felt like my body just needed rest! Definitely the best decision because I was able to bust out a great workout this morning before work.


Thursday night’s dinner was literally comfort in a bowl. I got quite a few comments and likes on my instagram when I posted this dinner so I wanted to be sure and share it with you guys ASAP. For some reason,  my appetite was off all day Thursday but by the time I got out of work, I needed food IMMEDIATELY. Comfort food. A few weeks ago, I bought a box of Annie’s whole wheat shells and white cheddar on sale, and tonight was the night to break it out. Per usual, I made my own substitutions too!

Chicken Sausage-Veggie-White Cheddar Pasta Bowl


Chicken sausage link

1/3 cup of Annie’s wheat pasta shells

1 ½ tsp of the cheese mix that comes in the box

1 tbsp unsweet almond milk

Zucinni and Squash



Sprinkle of Parmesean cheese

½ tsp olive oil

Salt, Pepper, Olive Oil cooking spray

How to:

1. Cook pasta according to directions on the box. Once you drain the pasta, pour in 1 tbsp almond milk (or any lowfat milk will work) + 1 ½ tsp of Annie’s cheese mix. Let this sit on low heat while you prepare everything else.

2. While pasta is cooking, cut your chicken sausage into small pieces and spray skillet with olive oil. Cook for 5-6 minutes on medium and start chopping your veggies.

3. Set sausage aside when done and toss all veggies with ½ tsp of olive oil and sprinkle with salt and pepper. Sautee until they are nice and soft. (I keep spraying mine with the olive oil cooking spray because I think it adds more flavor).

4. Transfer everything into the pot with pasta, sprinkle parmesean cheese and stir everything around. Add salt and pepper as your please.

5.Put in a big ole bowl. Sprinkle with a little more parm cheese. Serve!

LoveMintChip Tips: This serves one but could easily be doubled, tripled, etc. Enjoy!


Green Muffins from STUFTMama’s blog. I LOVE this! It is amazing. The only thing I switched was instead of coconut flour (I am too cheap to spend this much $ on flour)… I used whole wheat. And I added a tsp of chia seeds (obviously). Topped with almond butter and peanut butter (because who can actually decide between the two?!!) and some warm blueberries…. a perfect, perfect snack.Don’t be scare of it (click on the link to her blog for the recipe)!


Food prep on Sundays. I love when I actually do this!! I made a big batch of quinoa, cut up a lot of veggies, cooked a few pieces of chicken, and made some Fitnessista amazeballs for snacks. Ready for a week of clean eats!!

While I was at it.. I made some shrimp “fried” rice!
