foodie friday: {thankgiving inspired breakfasts}

Hi friends!

So you guys probably remember that I made a lot of yummy food this summer when I had a kitchen. Unfortunately, I do not have a kitchen at school because I live in the Kappa house. NOT that I am complaining at all that I have all of my meals made for me… I still really miss being in the kitchen.

I will be home the whole week for Thanksgiving and you better believe that is where I will be living. Sorry mom and dad… I know you love when I cook all day 🙂 And because I naturally have to pin every single recipe I see, I have quite an array of different options to make.

I have been on a giant recipe searching “bread-y” breakfast kick. I have been craving spice bread. Pumpkin muffins. Apple muffins… any and all things that smell and taste like fall.

Come on… you know there is absolutely NOTHING better than a warm piece of yummy bread and coffee to start your belly off happy for the day.

Some of these recipes are healthy. Some are absolutely not.

What do you think I should make?

wiaw: {halloween wish list}

Good morning friends and Happy Halloween!

To be honest, I am not the biggest fan of halloween for adults. I definitely think it is more of a little kid holiday. With that said, I don’t exactly mind all of the goodies that go along with it. I have been eating candy and sweets left and right… but it is Halloween right? No. I have the world’s worst headache from all of the sugar… but oh well 😉

I actually wrote one of my articles for The Daily Campus on how to Tackle the week of Halloween treats. Even though I have not been following my own advice, here is the candy guide I mapped out in my piece. (My article got picked up by Pegasus!!! WOHOO!!!!)

For today’s WIAW, I put together this little “wish list” of what exactly I would want to eat on my perfect Halloween day. As always, thanks Jenn!

How much longer do I have to wait to have kids and participate in all of these fun eats?!? Totally kidding :)!

what i love now: {friday fall obsessions}

Hi friends!

It is FRIDAY! Anyone else pumped?! With the weather finally cooling off in Dallas I am ready for fall. Pumpkin lattes. Skinny jeans. Chunky sweaters. Boots. Comfort food. Oh, and lets not forget that I want to be a mom like tomorrow for the sole fact of having an excuse to bake all of these precious fall treats.

MIMM: {Our Goal}

Hi friends!

Can you believe it is already MONDAY?! Me either! There are so many marvelous things going on right now! So I wanna jump right into it. Thanks Katie for hosting this!

1. This weekend!! Date Party “Glow with the Flow” Friday night with Kappa, Pi Phi and Theta. It was SO much fun! Boulevard Saturday. Get my life together Sunday!

3. Okay so let’s chat about something. Sooo… since being back at school I have definitely fallen off the bandwagon. Not like terribly and I usually eat healthy because I PREFER the healthier option, but I can not seem to get my munchy little fingers out of anything these days. There is absolutely NO reason for me to have multiple chocolate chip cookies in one sitting. I need to eat ONE and move on. Gross. Time to REEEEEEL it in and I have the perfect way!

You guys remember those days when I used to be able to run and run and run? Yeah.. I hardly remember them either. Saturday was the first time I have actually run straight without stopping for 4 miles. I am craving to get back into the running groove.

Soooo… P and I were talking about what we wanted to do about gifts, etc. this year we decided that we will spend our money on plane tickets and traveling to see each other! And when it comes to birthdays we will focus on doing something that the other loves to do.

Lucky for Parker my mind runs ninety gazillion miles an hour and I already knew exactly what I wanted to do for my 22nd birthday coming up in November. Like any other normal person would ask for…. THE TURKEY TROT! My birthday is the day after Thanksgiving and I have always wanted to do this (okay I really just want him to start running with me…).

Parker wants to get more into running so we can have something we enjoy doing together, and my short stumpy legs run a LOT slower than his… so we decided to do a “couch to 8K” plan.

Our goals: He will work on distance and I will work on speed.

Perfect, right?! I am hoping the running bug will hit me again. I already ran my .5 mile super fast and was done before I knew it (I also walked a mile!). Now I KNOW that these distances are not long at all.. but they are the perfect way for me to spend time building up speed and for P to have enough time to build his endurance! YAY!!! I can not WAIT!

*Note: I will do all of my other workouts normally and do these speedy runs in addition to my workout for the day 3 times a week since they are so short and will take me no time at all!!!!

4th of July Fun + LoveMintChip Skinny Margs

Hey friends!!

How was your 4th?!! SO much fun?!!

I hope that you all had a great day. When I left you yesterday, I was about to go do a little workout. I had better things to do than spend my 4th of July in the gym so I gave myself 2o minutes and did a super quick little workout and worked up quite a good sweat. I am going to share it with you tomorrow! (I know you guys will all be waiting in much suspense ;))

Speaking of sweat, Katelyn is doing a Eat Clean Sweat Dirty challenge right now. She is the stinking cutest thing I have ever seen! And what better way to keep myself on track with my action plan than to join in on hers?!

Back to yesterday… I came home and fixed a quick lunch. I will definitely be giving you the recipe soon for this yummy egg white omelet that was FULL of flavor. After  lunch I got ready super fast and came downstairs so find quite the little crew over at our house!

I was craving margaritas and after researching a few recipes, I just decided to whip out the blender and create my own. Man these were SO good and they make a good amount (you could half this recipe if it is just 2-4 of you). We made strawberry and mango.Perfect summer treat!

A few of these were also consumed yesterday… and a vodka soda at Red, White and Boom (a 4th of July thing we went to yesterday afternoon).


I really do send him as many selfies as I tell you guys that I do…….

Too much fun!

The night ended with some french fries from this little sandwich place who makes the most amazing potato wedge fries and oreos. OOPS!!!!! [Action plan questions: it was a holiday!!! duh!! 80/20… will just eat super clean today!]

This morning I got up and was surprisingly ready to run. So I headed out for a great 4 mile run before work.

WIAW: {Happy Birthday America}

Happy 4th of July friends!

I hope most of you are able to relax today and spend our country’s birthday celebrating however you please!I don’t know about you, but I woke up this morning feeling blessed. Blessed to live in a country where I can go about life as I please. Blessed that I can choose my God to pray to, what I want to wear, what I want to eat and drink, and most of all to live in a country where I can make all of my own decisions independently. Today I challenge you to put aside all of your political views and remember that we are first and foremost Americans. AND I want to offer a big THANK YOU to all the men and women who serve our country to make this possible.

{Ok, little rant over. Clearly I have been spending to much time around politics…}

Since it is Wednesday, I have a quick WIAW post from yesterday’s eats and then I am off to squeeze in a quick workout before the celebration begins. And what better place to be celebrating than in our nation’s capital!?

This month’s WIAW is focusing on fitness! Woohoo! I shared a little bit of my goals with you all last week (I plan on doing a recap of how it is going in the next few days) if you want to check that post out. As always, thank you Jenn for hosting this!

Patriotic Breakfast:

1 Van’s wholegrain waffle topped with Justins Honey PB + 1/2 banana + strawberries+ blueberries + 1 tsp chia seeds. And coffee, obviously.

Lunch:

WELL, I thought all the interns were going to go to Panera so I did not make my lunch. Long story short we did not end up going so I had to find something I could work with in the NBC cafeteria. I grabbed a chef salad and ended up eating the turkey and ham + half the cheese + the slice of avocado + tomato and just took everything else off (Does anyone else HATE cold bacon?!! Yicccckkkk). This did nothing for me and kept me full for oh… 20 minutes?! Haha but it was the best I could do.

Afternoon snack:

The ice cream truck decided to pay a visit to NBC yesterday for a July 4th treat! Free ice cream + hanging with intern friends + celebrating it almost being a holiday + starving Anne > passing the ice cream up. Haha no but seriously… I know that this was not the best decision I have ever made but has one little 240 calorie ice cream cone ever killed anyone? Nope. And I loved every single bite!

Dinner:

I have had my eye on this recipe from Courtney for quite some time. Tortillas + chicken + sweet potato + spinach?!! Sounds delicious to me. Unfortunately, I was a hungry little beast so I did not have time to make mine as fancy as hers was. But I still went with the basic combination.

I sauteed some chicken (Salt, pepper, worcestershire) and steamed some frozen cubed sweet potatoes. I also decided to throw in some mushrooms with the chicken for a little something extra. At the last minute, I threw in about 2-3 cups of spinach to wilt (yes, I go through 2 XL bags of spinach a week). Then, I heated up a little skillet with some olive oil spray and stuffed my tortilla with all the goods. I let this cook for like a minute on each side. It was kinda overflowing 😉

Ya’ll… look at the stats on these TJ’s whole wheat tortillas!!

Yes, I in fact CAN read an ingredient list and I know the first one is water and there are a good amount of ingredients BUT… can you really get a tortilla that is this yummy for these kind of stats (45 calories, 10g carbs, 7g fiber and 4g protein)? No. And these tortillas are so soft, ooey and gooooeeeyyyyy.

I melted 1 wedge of laughing cow cheese and 1 tbsp of fat free sour cream with a sprinkle of salt and pepper so my quesadilla would have a a little dippage (a word?!) action.

The combination of flavor in this dinner was great! Served with a side of fruit (because I did not get my usual 27182718721092 servings of fruit on this particular day. Loved it. Super easy dinner.

Dessert:

Sugarfree Dark Chocolate Jello Pudding. Love these darn things!

I poured a glass of red wine with EVERY intention of going out. I got all the way ready, drank 2 baby sips and then it started raining, thundering AND lightening. If any of my friends are reading they will tell you, I DO NOT do bad weather. I hate the cold and I hate the rain. I’m not scared of it, I just find it perfectly miserable especially in a cute little outfit and heels.

I was quickly washing my face and in my giant t-shirt, boxers and glasses (I know, sexy!!!!!).

Fitness:

In lieu with the theme, after I finished breakfast (I woke up too hungry to go before) I took my self out to the pavement and did a 3.6 mile power walk before work! It was great and the weather was awesome. I love this view at the waterfront!

I have not shared this with you guys but I have a really bad hip click that acts up sometimes (my mom has it too and I have had it for as long as I can remember). I have no idea what causes it but the only way it feels better is by walking. Running makes it hurt pretty terribly so I am hoping it goes away in the next few days. Sometimes it stays for a week and sometimes it stays for a day. UGH!

{Note: it is gone TODAY!!!!}

Since part of my action plan is walking an extra 1-2 miles a day, after work I ran a bunch of errands and estimate I walked around 1.5 miles… (okay it was because I HAD to go to 2 liquor stores looking for something but a walk is a walk :))

Off to get my sweat on lbefore I consume my body weight in liquid calories…. HAVE A GREAT, SAFE and HAPPY 4th of July!!
