Oh well… it is a new week and all I can do is start fresh. But we did have a GREAT weekend!! It was honestly so much fun.

Well this week is crazy I have to tell you… and I am leaving town again on Friday!!

We are covering the election tonight for SMU so I will be up ALL night long in  the journalism school but I really could not be more excited about it!! #SMUvotes

As far as working out goes, I have no idea what my schedule will look like. So clean eats are a must!!

Hi friends!

Hope you guys all had a beautiful weekend. Mine was awesome! It was really, really relaxing and a nice change of pace compared to the craziness of last week. Except for not getting to spend the day with this guy on his birthday.

Is it Monday already?!? What kind of marvelousness have I been up to? As always, thank you Katie for hosting this!

Friday night I went to dinner at Mi Cocina with my godmother Kate and her two cute friends. I had a mambo and guacolmole with chicken fajitas! Mico hits the spot every. single. time.

I should have NEVER posted about my fall favorites on Friday because I am pretty sure that I cursed myself. It got so cold here this weekend. I woke up Saturday morning and was in a wretched mood. I hate to be cold. My plans for a nice long run went out the window almost immediately.

After lounging around for like ever and getting some homework done, I finally convinced myself to go to the gym. The gym. The dreaded place that I hate. Okay, I do not hate it… I even kind of like it once I am there… but the gym at school just reminds me of winter and I really don’t like winter. I LOVE doing interval runs outside here and then just doing some little free weights in my room. But since I would rather die than be cold, it looks like it is time to get back to the gym.

I babysat most of the day on Saturday…. Did I mention that I am the world’s coolest babysitter and the real reason I like to babysit is to play with the family’s dogs? It’s fine and normal.

Then we went to grab drinks for Hillary because she finished the LSAT!! YAY CONGRATS! GO HIL!!!!!!!!

Sunday morning I went to a new workout class with Mary Kathryn and then we had a 2 hour coffee date. The class was at Tread Fitness and I reaaalllyyy loved it. Expect to see more almond milk lattees around here… it was amazing. It was the perfect Sunday morning!

Mal and I went to the Galleria to shop for a bit but I did not get anything becaussseeee… MY MOM is coming TUESDAY night!! WOOHOO!! Can’t wait.

My parents are usually in Dallas quite often but with Rollins in California, since I am supposed to be like some old senior or something that doesn’t get homesick… they have had to split their time 😦 But I can not wait for her to come so we can shop, shop and shop.

I am in major need of a few things…especially for Vegas this weekend!!

What did I say.. VEGAS??!?!? Yes! I am so excited. Well, kind of. I am not sure if Vegas is really my scene (hence all of my really wild weekends ;)) but I think we are going to have a blast. Mostly all of my best friends are going and a ton of other friends from SMU! I know it will be great once I get there.

Well now that you are all caught up on my life.. because I know you guys anxiously sit around and wait for my Monday updates… I am off!!

wiaw: {my weekend at home eats + p’s birthday dinner}

So you guys may remember that I went home this weekend!! It was amazing 🙂

This What I Ate Wednesdayis a little different than the usual… it is a little bit of my at home eats mixed in with P’s birthday dinner. I am SO proud of the dinner that I dedicated an entire post to it.

A quick weekend recap (sorry for the lack of food pictures… who am I?!):

Thursday night I met this little crazy person at the airport and we got to Jackson around 11 pm. P was coming to pick us up and Rebecca came with him to surprise us 🙂 We got home and I got to hang out with my favorite person (okay animal) ever for a little while and stayed up catching up with the fam.

Friday morning P and I went with my family to watch Becca perform in the pep rally! Is she really a senior?!?! We joined my grandparents for lunch at my favorite Keifers and then went on a 2 mile run with Gumbo!

We went to dinner with his parents and then to the football game to watch Rollins crown the new queen… CONGRATULATIONS LUCY!! Lucy has been one of Rebecca’s best friends for forever and we could not have been more excited for her on this special night!

Saturday I had breakfast with my bestie at Broad Street and then mom and I went dress shopping with my cousin who is also on the homecoming court at her high school in a few months!!

I spent the rest of the day cooking and preparing for P’s birthday dinner with my family.

Let’s talk about about this dinner. What was on the menu?!

1. Grilled salmon for me, mom and dad. I marinated the salmon in a baby drop of olive oil, salt and pepper. That’s it. It was amazing! P grilled (yes, he had to help with his birthday dinner haha) them for about 5-7 minutes. They turned out perfectly!

2. Filets for P, Becca and Ro. I used this recipe for the steaks and they turned out FANTASTIC. Full of flavor. I marinated them all day in some kind of special meat sauce and worchistier. They were perfect!

3. Grilled shrimp. Marinated in lemon juice, olive oil, lemon pepper and garlic salt. Grilled for about 2 minutes on each side.

4. Asparagus with roasted pine nuts. Dizzled in olive oil and roasted at about 400 degrees with a sprink;e

5. Mushroom quinoa. I used this recipe: Mushroom Quinoa Risotto. It was fanastic! I like having a carby side with dinner and quinoa is the only grain that is a complete source of protein and a really healthy complex carb. Healthy and delicious? I’ll take it!

4. Fresh Market french bread.

5. Salad with asiago cracked pepper dressing.

6. Chocolate fudge pie.

Sunday was a rainy, lazy day and I did not get out of my pjs until I was forced to go to the airport 😦

Did I mention we got fro yos the size of our head and I ate all of mine and all of his? It was a neat moment.

It was a perfect weekend at home. I was getting real homesick for my family and this was just what I needed! See you guys later this week!!!!

It’s Friday!

I am so excited for this weekend. I honestly plan on doing nothing!! I am in the mood to just chill, hang out with my friends and be productive. I found this picture and unfortunately feel like it describes my life.

Today I wanted to talk to you guys a little bit about the paleo diet.What is it? Read this article for more!

I actually have been doing a ton of research on this and Parker and I have been going back and forth for the past few weeks on whether or not we wanted to try it out. I would NOT call this a diet. Diets do not go over well with this girl. Most people go paleo as a lifestyle change. I think it is awesome! It focuses on eating real, whole and natural foods. Some even call it a “caveman diet”.

If you know P and I, we are kinda all or nothing people. And we also love food. Like a lot. When we first started thinking about it, it sounded really appealing. There are definitely things we could both do to clean up our eating habits and thought this would be a great way to start.

WELL… the more we started thinking about it, the more we realized that it is actually very unrealistic especially while we are in college. The main thing that got both of us is the no grains and the no dairy.

For us, at the stage of life we are in right now, cutting out one or more entire food groups just does not make sense to us. For example, last night I went to a meeting that lasted until 9 pm  and there was free dinner and all they had was pizza. Well I was not going to not eat the pizza. It was my only choice for dinner and I was starving. I came home and ate my favorite KKG desert ever, caramel ice cream loaded with butter and sugar. This is in no way paleo!!!

I’m sorry but I LOVE a good bowl of wheat pasta, quinoa or a gigantic bowl of cereal. I love a piece of cheesy ooooooey gooey pizza or a turkey sandwich. I could live off of sushi with rice. I like cream in my coffee and I really like a gigantic bowl of ice cream or slice of chocolate cake. I am not about to spend my last year of college avoiding alcohol or the deserts at the Kappa house.

I think Gina does a fantastic job of explaining what we we feel are the pros and cons of the paleo diet in this post: Focus On: The Paleolithic Diet.

However, we did sit back and realize that a lot of our meals could be considered very paleo-ish. I find myself eating a piece of meat or fish with vegetables all the time. But I also find myself eating sweet potatoes ALL the time which are not considered paleo and I LOVE a sweet potato. In the mornings, I need a piece of toast with my eggs or an english muffin with my almond butter.

Maybe one day when we have our own kitchen and have more time to prepare and plan meals this would be awesome to try! For now I think we are just going to focus on cleaning up some of our eats and incorporating more paleo-ish style meals into our daily diets, but we definitely do not want to do this right now.

For those of you that are paleo, more power to you!! This is TOTALLY just my own personal opinion about it. I think it is AWESOME that you have this much will power. Send some our way?!! 😉

I am an emotional basketcase + a HUGE surprise

Hi friends!

How are you guys?!

I had every intention of doing a MIMM post yesterday but the day went by so fast and was over before I knew it! Why are Mondays always so crazy?

Let’s talk about something. Remember on Friday when I posted that post that was just full of positivity. Yeah… well that feeling lasted for about two more hours.

I had a feeling P was coming to visit this weekend and surprise me but he did not come, and he did not come, and he did not come. I waited ALL day on Friday. Finally at 4 pm I took myself to bed and cried. cried. cried. Did I mention I cried? Like think four year old temper tantrum crying. I am SUCH a drama queen. Then he turned his phone off for like three hours and I am such a psycho I was looking up southwest flights to see if he was on one of them and sending him death threat texts.

Aren’t I am complete treat?! Please do not think this is normal behavior. If this tells you anything my best friend Baxter told me that this is the first time she has ever seen me have a breakdown about me and P in all 4 years. So I am not actually crazy haha.

Ohhh…. here comes 8 pm and I get this text!!

HE CAME!! BEST DAY EVER 🙂 I threw a pillow at him, told him I was so mad at him and then I cried more. My friends thought I had completely lost my mind.

Two of my amazing best friends made dinner reservation for us and we went to Al Beirnet’s and had the best date night ever. Finally! Steak dinner + lots of red wine = a perfect fix for a giant puffy face and swollen eyes happy anne!

Saturday morning we were up bright and early to run our 1 mile together! We actually ended up going about 1.3 because someone (okay it was me) forgot to press start to track our mile. Oops! Then we went to Starbucks and got coffees and headed to meet all of my friends for brunch!!

SO happy to be up on a morning run 😉

We boulevarded all day on Saturday, had way too much fun, went to the Katy Trail Ice House with friends. Shared a cheeseburger and fries. And onion rings. And beer. And then hung out the rest of the day!! Saturday night we watched football and got sushi take out. It was the PERFECT date night!!

It was such an amazing weekend. I am the luckiest girl in the world! And I get to see him again in 2 short weeks!

Now… Lets talk weekly goals. Remember P and I are doing our couch to 8k together so I have to be sure to get that in!!

Eats: Stop taking a bite of everything I see. No… but really! Other than that I am just going to keep normal with my eats. All about the 80/20 rule over here my friends… okay maybe more like 60/40 😉 My meals are great but I am going to try to incorporate some healthier snacks into my day rather than always reaching for animal cracker or sweet potato chips!

Workouts: You may read this and think I am addicted to Bikram. While yes that could in fact be true, you are supposed to practice Bikram a minimum of 3 times per week and more if you can. Some weeks I only have time to go twice and some weeks I have time to go more, it totally depends. So, on weeks where it works with my schedule for me to go a lot I try to fit as much in as possible! Lots of Bikram makes for a very happy me and since I am apparently the world’s greatest emotional basket case right now… I should probably just go live there.

Monday: .5 mile sprint + Bikram

Tuesday: Bikram

Wednesday: 1 mile sprint + 45 minute running intervals

Thursday: 30 min cardio + weights

Friday: Bikram

Saturday or Sunday: 1.5 mile sprint + Bikram + maybe a long walk?!

MIMM: {Our Goal}

Hi friends!

Can you believe it is already MONDAY?! Me either! There are so many marvelous things going on right now! So I wanna jump right into it. Thanks Katie for hosting this!

1. This weekend!! Date Party “Glow with the Flow” Friday night with Kappa, Pi Phi and Theta. It was SO much fun! Boulevard Saturday. Get my life together Sunday!

3. Okay so let’s chat about something. Sooo… since being back at school I have definitely fallen off the bandwagon. Not like terribly and I usually eat healthy because I PREFER the healthier option, but I can not seem to get my munchy little fingers out of anything these days. There is absolutely NO reason for me to have multiple chocolate chip cookies in one sitting. I need to eat ONE and move on. Gross. Time to REEEEEEL it in and I have the perfect way!

You guys remember those days when I used to be able to run and run and run? Yeah.. I hardly remember them either. Saturday was the first time I have actually run straight without stopping for 4 miles. I am craving to get back into the running groove.

Soooo… P and I were talking about what we wanted to do about gifts, etc. this year we decided that we will spend our money on plane tickets and traveling to see each other! And when it comes to birthdays we will focus on doing something that the other loves to do.

Lucky for Parker my mind runs ninety gazillion miles an hour and I already knew exactly what I wanted to do for my 22nd birthday coming up in November. Like any other normal person would ask for…. THE TURKEY TROT! My birthday is the day after Thanksgiving and I have always wanted to do this (okay I really just want him to start running with me…).

Parker wants to get more into running so we can have something we enjoy doing together, and my short stumpy legs run a LOT slower than his… so we decided to do a “couch to 8K” plan.

Our goals: He will work on distance and I will work on speed.

Perfect, right?! I am hoping the running bug will hit me again. I already ran my .5 mile super fast and was done before I knew it (I also walked a mile!). Now I KNOW that these distances are not long at all.. but they are the perfect way for me to spend time building up speed and for P to have enough time to build his endurance! YAY!!! I can not WAIT!

*Note: I will do all of my other workouts normally and do these speedy runs in addition to my workout for the day 3 times a week since they are so short and will take me no time at all!!!!

Saranac with P: Part 2

Hello sweet friends!

Happy Friday! Anyone else pumped that it is the weekend?!! I am SUPER excited. I am going to a precious girl who I intern with beach house and am beyond excited to have the weekend to hang out with all my friends I have met at NBC outside of our “intern cave” as we like to call it.

When I last left  you on Wednesday… I promised another post about the second part of my trip to visit P.

On Sunday morning when I woke up I was SO sad. I couldn’t believe it was already time to go 😦

We headed to the kitchen to help out with breakfast and then I was off to the airport. I downed a stack of chocolate chip pancakes on the car ride there and even  that did not make me feel better!! He dropped me off and had to get going because Sundays are his busiest day. I was a complete basket case. Crying. No… SOBBING.

After waiting around for a few hours at the airport (my flight was delayed 3 times) the lady announced it was CANCELED. Oh.. more tears. I was so, so, so happy! Then she told me everything was booked until Tuesday!! FINE by me.

One of the sweet girl interns P works with came to get me and I was back at camp!  The whole day was a whirlwind and Parker was working like crazy. I just kinda hung out and tried to help him as much as possible.

Finally dinner rolled around and much to my surprise it was BIG COOKIE. Have you ever been to Young Life camp and know what big cookie is? It is the famous desert. A giant skillet cookie topped with ice cream and chocolate sauce. I don’t know what they put in this thing but it is crack. Happy Anne.

That night I got to see him in action with a few of the kids as the camp EMT. He is SO patient, calm and understanding. He must have seen this one girl 4 times in one day. I would have given her a tylenol PM and told her to go to sleep… (good thing I am not the one entering the medical profession)… but he just kept  talking her through things and never got his feathers ruffled.

Even in a pretty large emergency that happened Sunday night (don’t feel comfortable sharing) he was so calm. He will literally sit with a kid crying over  a stubbed toe for 20 minutes explaining to him why he feels the way he does and then will tell him to come back by later so he can check it out again. He remembers everyone’s name. Incredible. Sweetest thing I have ever seen ❤

He definitely has a gift and it was incredible to get to see it and be a part of it for a few days.

And apparently some of the high school girls who are working there for the month have been making up excuses to go visit him in the infirmary 😉 Haha.

On Monday he had to be up super early for a meeting so I went on a little run. Nothing special, just 2 miles but it felt good to move! It is really hard for me to run here because of my asthma with the super high altitude. The air is so thin!

We hung out in the infirmary for a good portion of the day (exciting!!) and then I helped out in the bakery that afternoon. It was so much fun! Before dinner P and I went on a short little boat ride around the lake. The weather was awesome. Nothing too special but just nice to be together. Saranac lake is so pretty gosh!!

Monday night after dinner he said he had a surprise… PARASAILING!! It was so much fun. I did this 2 summers ago but had forgotten how beautiful it is!

I was not ready to go on Tuesday morning but felt much better about leaving than I did on Sunday!

Needless to say it was the best 5 days of my summer and I am so happy I got to spend it with my best friend in the whole world!!! Sorry for the gooby quote but this explains us perfectly 🙂

And I think that is about it for today.

WIAW: {Our Perfect Day}

Hey friends!!

Well… I am officially back! I left Saranac yesterday and got back late afternoon. I was going to do a post last night  but decided I would just incorporate it into WIAW.

I am going to do a 2 part post on my trip to see P because there is NO WAY I could fit it all into one post. It was the best 5 days EVER!!

Since it is WIAW, I am going to tell you all about our Saturday “surprise date day” because being the two foodies that we are, you know a lot of good eats were consumed.

Let’s back up to Friday afternoon when I finally got there. My flight was delayed, I got on the plane, down the runway, had to get back off, etc. etc. etc. It was a disaster and I was crying like a baby. I am sure everyone in the airport thought I had something severely wrong with me but I thought I was not going to be able to get there. I am a treat.

Fridays are P’s slower days (and let me tell you…. he is BUSY on the other days….) so it was nice because we got to walk around and just enjoy camp and spend a ton of time together. Saranac is one of my most favorite places on earth and it was so great to be back and see familiar faces and also meet the amazing other people he has been working with all summer.

We had a delicious dinner + desert (if you have ever been to a Young Life camp… you know the food is incredible) and got to hang out for the rest of the night. I went out with the boys to wake surf and then P and I went out on the boat to look at the stars.

 I forget what the sky looks like here at night. P said it perfectly, “it is uncapturable”. Such a great night!

Saturday morning I was told to “be up at 8 am and wear your uniform.” Oh… my uniform is what P likes to call black lulu leggings, a big t-shirt, and tennis shoes. Normal. He also told me to pack something nice for dinner! Since Saturdays are his day off… we left camp for the day and our adventure began.


I was greeted bright and early with a cup of coffee and then we hit the road to Lake Placid for breakfast. We went to this precious place called “The Breakfast Club.”

I had a greek yogurt bowl with homemade granola and fruit with a side blueberry pancake. I couldn’t pass up the maple syrup (it is super close to Canada so the syrup is to.die.for). He had some breakfast potatoes with ham and dippy eggs on top. It was such a good meal and I hope to come back.


In lieu with the theme of WIAW Fitness, we went to a place called the Flooms and climbed/ walked around. It was beautiful and SO much fun! We would climb, sit, talk, climb again, walk. I am not going to lie, this was a great little workout and we both worked up a pretty good sweat.

After we left here we drove to Whiteface Mountain , the 5th highest mountain in NY State and one of the High Peaks of the Adirondack Mountains. It was so cool! The view was really unbelievable. You could even see Montreal, Canada from a certain point. To get to the top, we climbed about a million flights of stairs… no, really. It may not be considered a work out to you, but I was definitely glad to get to the top 😉

Have you ever had a moment where your breath was taken away? That is how I felt at the top of the mountain. It was the most incredible thing I have ever seen. It reminded me of how lucky I am to have a God that created all of this just for us.

It would not be a day with Anne and P without just a little diva moment…..(or two)


After our adventures, we hopped back in the car and drove down the mountain a little bit to find a picnic table to eat our lunch. We picked up sandwiches at this precious place across from where we ate breakfast before we left.

Turkey for me and some kind of pulled pork for him! The view wasn’t all that bad either 😉


We were both a little tired by this point and I had no idea what he had in store for us next. He wanted to take me to his favorite spot. So we drove back into the town of Saranac and walked to this gorgeous lake (another activity!!). It was behind a rail road track and it was honestly just so peaceful.

There was hardly anyone around us. We had a blanket and just laid there for a few hours, napped, talked and hung out.

Perfect, perfect way to spend the afternoon! If you can not tell by this post already… we are pretty much one of the most laid back couples together. We genuinely enjoy each other’s company so much and are happy just hanging out.


After a quick change we headed into Lake Placid (near where we ate breakfast) to the Dancing Bears restaurant. We actually had driven by this place earlier and I said, “Oh, that looks like such a fun place to eat!” Little did I know… that is where he had been planning to go.

We sat outside (the weather was amazing) on the patio. By this point we had both worked up a little appetite so we immediately ordered the homemade humus with pita.

For our entrees he had the ahi tuna sandwich with these incredible sweet potato fries… in case you are wondering.. of COURSE I helped him eat them.

I went with the grilled chicken pesto pizza with tomatoes and spinach… YUM! And a salad on the side for some greens.


As if the day could get any better, we left dinner and went to Whiteface Lodge. This is one of the most beautiful hotels I have ever been to. We were seated next to a window and could see the Adirondacks and the sun set. It was beautiful!

I was SO full and said there was no way I could eat anything else. Oh… what?? My second stomach grew and I cleared my plate???? 😉

We started with decaf coffees and P ordered the chocolate mouse with fresh fruit. I had the brownie ice cream sandwich (typical). It was two brownie cookie with toffee ice cream in the middle surrounded with chocolate chips and homemade caramel sauce. WOW. Oh, and a scoop of vanilla ice cream on the side.

Let’s just say I went to bed with such a full belly and a happy heart! We never get to be together for an entire day just us and it was absolutely incredible. We had so many great talks and it was so nice to finally catch up and just enjoy each other’s company. This was our perfect day.

Stay tuned for Part 2 of the rest of the weekend! I can not wait to tell you what else we did and how awesome of an EMT P is (no really… I think I loved him ten times more than I already do each time I saw him with a kid).

I have not had the healthiest of eats over the past few days or had a full on workout but let’s be real, all I really cared about was being with Parker and the last thing I was going to worry about was trying to eat super clean or sacrifice time with him to get my sweat on. It was worth every single bite of yummy food and more 🙂

I’m Not Back!!

Hi guys:)

So I am not doing my usual MIMM because I’m not back yet! Just checking in to say I am alive.

My flight was canceled yesterday and I can’t get back out until Tuesday. What a blessing and surprise! Can’t believe I have another day here with P.
