Hey ya’ll!

Wow…. this week at home is already completely flying by!! Before I jump into yesterday’s eats for WIAW… I have to tell ya… I ate a LOT more than what is pictured in this post. I kinda forgot throughout the day to take pictures but I ate plenty of handfuls of wheat thins, chocolate chips, etc. It was just one of those days, ya know?! My stomach was way off and I barely ate anything on Monday so yesterday I was like a ravenous little pig HAHA.

I DID manage to take picture of my 3 main meals, so here ya go! As always, thanks Jenn for hosting!

Breakfast:

Almond butter french toast + side of fruit!

Lunch:

My grandmother took my sisters and I to a new restraunt! I ordered a grilled shrimp po-boy with a side of cole slaw. I ended up taking the bread off because it ruined the sandwich.

Dinner:

Before my mom left for work yesterday, she asked me to make chicken florentine bowtie pasta for dinner. It was delicious. Head on over to Picky Palate for the full recipe!

The only changes I made were less mozarella cheese and only 1 cup of the cooking creme. An easy peasy weeknight dinner!

Happy What I ate Wednesday!! Do you ever have those just greaaattt eating days where you love everything you eat? That was me yesterday.

Smores cookie bars (X2)… I love smores… and I love cookies. What more could you ask for?

I PROMISE I am getting a manicure. Tomorrow. I know… gross!

Snack (3:30 pm)-

Bowl of Strawberries

Workout (4:30 pm)-

Bikram Yoga. Do I even need to go into how much I love it?

Dinner (6:15 pm)-ย 

Balsamic chicken + the last bite of green beans left + spinach.

3 layer cookie brownie. This was warm. Oooey and goooeeey. Need I say more? I think it was this recipe.

After Dinner Snack (8:00 pm)-

Hot chocolate (almond milk + sugar free hot chocolate packet).

This is a perfect before bedtime treat!

wiaw: {election day fun}

Hi friends!!!

So… before I jump into yesterday’s eats let’s talk about the fact that I 100% think election day should be a holiday. I was entirely too focused consuming myself with the news and didn’t do a lick of one productive school thing. Or maybe that is because I am a complete journalism junkie? Yeah… that is probably it.

Anyways… On to what I ate during my own election day “holiday”.

wiawI knew it was going to be a very long night (it was not nearly as long as I expected!) so I knew I needed to full properly in the morning and squeeze in a quick workout.

Breakfast 8 am:


After a morning run and walk, I fixed a quick bowl of oatmeal + a spoonful of almond butter + half a banana + handful of blueberries. Tastes just like a muffin!

Lunch 11:45 am:

Monday night I picked up a few things from Central Market to have on hand for the day.

Grilled chicken+ cranberries + quinoa + a little Kappa pasta salad bc I love it!

Anyone else love the sweet and salty combination of cranberries with meat or fish? I love it!

Snack (3:30 pm):

I had a ThinkThin bar for some major protein. I swear these things can keep me full for hours!

Dinner 5:30 pm:

Even though the pizza in the journalism school smelled fantastic, I knew that my stomach would probably not appreciate it too much and I did not want to be uncomfortable all night sitting at the anchor desk.

Salmon ceaser salad (also from Central Market… can you tell I love that place?).

Desert 8:30 pm:

I brought an apple + nutella just in case my stomach was grumbling… and it was.

Overall, such a fun day! No matter what the outcome was or what your opinion is, we are all still Americans and I fully intend to support President Obama for another 4 years!!

wiaw: {halloween wish list}

Good morning friends and Happy Halloween!

To be honest, I am not the biggest fan of halloween for adults. I definitely think it is more of a little kid holiday. With that said, I don’t exactly mind all of the goodies that go along with it. I have been eating candy and sweets left and right… but it is Halloween right? No. I have the world’s worst headache from all of the sugar… but oh well ๐Ÿ˜‰

I actually wrote one of my articles for The Daily Campus on how to Tackle the week of Halloween treats. Even though I have not been following my own advice, here is the candy guide I mapped out in my piece. (My article got picked up by Pegasus!!! WOHOO!!!!)

For today’s WIAW, I put together this little “wish list” of what exactly I would want to eat on my perfect Halloween day. As always, thanks Jenn!

wiaw: {healthy eats come back in my life}

Hi friends!

Long time no talk. When I left you on Friday I was headed to Vegas and then to Cali to visit my sister. It was a whirlwind of 5 days but it was SO much fun!! I am still putting together all of our pics, etc. so I will have a FULL recap super soon.

Today let’s talk about getting some healthy food back into my life. In Vegas I basically ate whatever and whenever. We really didn’t even eat all that much, it was just a bunch of junk whenever I did sit down to eat (if you can imagine!!). However, it was an awesome 3 days with amazing friends and I wouldn’t take back a single morsel of food or beverage I consumed.

SOO… now let’s talk about how I am getting back on track/ planning to STAY on track for the next week!! Thanks Jenn for hosting this!

Even though I was traveling yesterday and was in the airport, my body was craving healthy eats.

Workout (8:45 am):

I started the day with a 40 minute sweat session in the basement gym of my sister’s dorm (I want a basement gym!!!) while she was in class.

Breakfast (9:45 am):

I forgot to snap a picture of breakfast but it was a banana + bite of scrambled eggs (way to buttery for me!!) + fresh pineapple.

Lunch (12 pm):

For lunch I grabbed a chopped salad from Subway before my flight.

Shredded lettuce + spinach + turkey + olives + tomato + pickles + balsamic vinegar. I got in some much needed veeeegggiiiieesss.

Snack (2 pm):

As a snack I had some sliced apples and dipped them in my Justin’s Vanilla Almond Butter Packet. This almond butter tastes like candy. So, so, so good.

I also had a couple of handfuls of almonds between flights!

Dinner (8 pm):

Mallory picked me up from the airport and we went to Central Market to grab dinner. I wasn’t starving so I had the spring rolls! Delicious.

Bedtime snack:

When I got back, I had a couple of squares of dark chocolate while unpacking. This is my new favorite brand! Amazing.

Today I am planning on cleaning up my eats even more… I started with some egg whites and spinach and am currently snacking on a grapefruit trying to decide if I should go on a run?!?

Ohhhhh…. and I am taking a personal day. #notsorryaboutit.

wiaw: {my weekend at home eats + p’s birthday dinner}

So you guys may remember that I went home this weekend!! It was amazing ๐Ÿ™‚

This What I Ate Wednesdayis a little different than the usual… it is a little bit of my at home eats mixed in with P’s birthday dinner. I am SO proud of the dinner that I dedicated an entire post to it.

A quick weekend recap (sorry for the lack of food pictures… who am I?!):

Thursday night I met this little crazy person at the airport and we got to Jackson around 11 pm. P was coming to pick us up and Rebecca came with him to surprise us ๐Ÿ™‚ We got home and I got to hang out with my favorite person (okay animal) ever for a little while and stayed up catching up with the fam.

Friday morning P and I went with my family to watch Becca perform in the pep rally! Is she really a senior?!?! We joined my grandparents for lunch at my favorite Keifers and then went on a 2 mile run with Gumbo!

We went to dinner with his parents and then to the football game to watch Rollins crown the new queen… CONGRATULATIONS LUCY!! Lucy has been one of Rebecca’s best friends for forever and we could not have been more excited for her on this special night!

Saturday I had breakfast with my bestie at Broad Street and then mom and I went dress shopping with my cousin who is also on the homecoming court at her high school in a few months!!

I spent the rest of the day cooking and preparing for P’s birthday dinner with my family.

Let’s talk about about this dinner. What was on the menu?!

1. Grilled salmon for me, mom and dad. I marinated the salmon in a baby drop of olive oil, salt and pepper. That’s it. It was amazing! P grilled (yes, he had to help with his birthday dinner haha) them for about 5-7 minutes. They turned out perfectly!

2. Filets for P, Becca and Ro. I used this recipe for the steaks and they turned out FANTASTIC. Full of flavor. I marinated them all day in some kind of special meat sauce and worchistier. They were perfect!

3. Grilled shrimp. Marinated in lemon juice, olive oil, lemon pepper and garlic salt. Grilled for about 2 minutes on each side.

4. Asparagus with roasted pine nuts. Dizzled in olive oil and roasted at about 400 degrees with a sprink;e

5. Mushroom quinoa. I used this recipe: Mushroom Quinoa Risotto. It was fanastic! I like having a carby side with dinner and quinoa is the only grain that is a complete source of protein and a really healthy complex carb. Healthy and delicious? I’ll take it!

4. Fresh Market french bread.

5. Salad with asiago cracked pepper dressing.

6. Chocolate fudge pie.

Sunday was a rainy, lazy day and I did not get out of my pjs until I was forced to go to the airport ๐Ÿ˜ฆ

Did I mention we got fro yos the size of our head and I ate all of mine and all of his? It was a neat moment.

It was a perfect weekend at home. I was getting real homesick for my family and this was just what I needed! See you guys later this week!!!!

wiaw: {reeling in my snacky fingers}

Hi guyyyyss!

Is it really only Wednesday? Why is this week going by SO slow?

So in yesterday’s post I talked to you about my set up for the week. My goal is to keep my fingers from hanging out in every chip bag multiple times a day. AKA the sweet potato chips, Pirates Booty popcorn, animal crackers and baked cheetos. If I could only have a handful that would be great. But once I eat a few, I end up eating like 6 servings and then am too full for a nutritious snack or meal.

The thing is, I honestly would rather have an apple and almond butter or greek yogurt with berries but grabbing some chips seems easier than cutting the apple and spooning out the nut butter. When in reality they both take about the same amount of time. You guys know I am crazy.

Sooo… yesterday was my first time attempt at switching my snacks to better options. Now if I could just make it a habit…

Gigantic salad beast.

{Grilled chicken, tomato, 1/4 avocado, shredded carrots, cucumbers, spinach with a tsp of hummus and tsp of tetraziki sauce}

Snack(s):ย 

You may thinks this looks like a lot of snacks… BUT I like to snack. I just need to remember to have snacks that are good for me ๐Ÿ™‚ It gives me energy and powers me through the day especially if I do not have a big lunch or have an afternoon workout.

1:30 pm-

Still kinda hungry from lunch so I had a little baggy of almonds. Maybe like 20?!

2:30pm-

Banana (unpictured!! sorry!!)

3:30 pm-

1/2 apple with 1 tsp of almond butter

Workout- 4:30 pm:

Bikraaaammmmm!!!!!!

Dinner- 7 pm:

Salmon filet and broccolini from Central Market + a baby half of a sweet potato

Desert- 8pm:

Green tea + 2 squares of Dove chocolate ๐Ÿ™‚

I have said this before and I will say it again… I will never give up desert. EVER. Life is entirely too short.

WIAW: {Getting into a Routine}

Hi friends!

So during last week’s WIAW, I shared with you all that I my goal for this month is to “fall back into a routine.” I have definitely been trying to accomplish this and already feel much better.

Oh wait… I also slept 12 hours last night so that could have something to do with it?! ๐Ÿ˜‰ Everyone around the Kappa house is congested and has no voice, sore throats, yick. I have not been feeling so swell myself this week and a good night of sleep is just what the doctor ordered.

Breakfast- 7:00 am:

2 eggs over easy + 2 pieces of wheat toast with sugar free jelly and chia seeds + a slice of turkey bacon

Snack- 9:30am:

I was still kind of hungry after breakfast… I know I had a huge breakfast but I also have a huge appetite so I grabbed a half a banana and spoonful of almond butter to tide me over through work!

Workout 10:30am:

I got to work and there was a gas leak on campus. They told us we got leave!! I am not going to lie I was kind of happy because that meant I could go ahead and get my workout over with for the day!

I did a bunch of strength training circuits (it has been over a week since I last did weights) and some cardio bursts! Not a bad little workout.

I gulped down a Vitamin Water afterwards! I LOVE this flavor (glow) and the color obviously makes me happy.

Lunch 11:45 am:

Strawberry spinach salad (walnuts + strawberries + apples + spinach) with balsamic vinegar topped with some chicken from the pasta salad at Kappa!! I went back for seconds, duh.

In the middle of lunch, one of my best friends Baxter came to get me to show me the beautiful flowers I got in the mail from P!! What a sweet surprise. This made my entire day/month/year! Roses + hydrangeas are my FAVORITE!

Snack 3:30pm:

Propel Zero packet and a little scoop of 0% Chobani greek yogurt + drizzle of honey + blueberries + flax seeds to tide me over until dinner!

I am LOVING these propel zero packets. I know what you are thinking. Not the greatest thing for me with tons of ingredients… but I have been in desperate need of some electrolytes lately especially during my Bikram classes and these little guys do the trick. Love ’em.


Dinner 5:45pm:

Grilled salmon + brussle sprouts + half a sweet potato. Yum, yum, and yum.

Oreo pudding for desert!!! Why this picture looks so small… I will never know. I had a HUGE serving.

To make this pudding our cooks use: Sugar free chocolate Jello + Reduced fat Oreos + fat free cool whip. Not too bad, right!?!!

Elizabeth and I made the menu at Kappa this week and I am not going to lie. I am LOVING our choice of meals!!

I think that is all! Off to do some homework and reading and then get in a good cardio sweat session. I am going to start with sprinting my .5 mile on the plan.

WIAW: {Refueling is Crucial}

Hey friends!!

How is life? Joining the WIAW party a little late. Today has been SO busy!! Not too many exciting things going on over here, just a lot of school, work, random meetings, you know the usual. I am getting SO excited to go see Parker tomorrow! WOOO!

Yesterday was kind of a fun day of eats. Since I am typically one to eat the same tings every day, I like switching things up a little bit. I was a HUNGRY BEAST yesterday too…because I made a BIG mistake.

I woke up really hungry because I had done Bikram the night before. I stuck to a lighter breakfast knowing I was going to run afterwards and would just eat something after my run. WELL, I got home later than I planned and and had to shower and look presentable for a meeting so I did not have time to grab anything. I came home for lunch SO hungry and this feeling lasted throughout the day. I know that even though I just did a short little run, I forget how crucial it is to refuel with at least something. Never again.

Breakfast (7:30am):

Eggs to order was on the menu at the KKG house. Besides oatmeal pancakes… this may be my favorite breakfast we have. I had 2 scrambled eggs + a piece of wheat toast with sugar free jam and chia seeds + a small tangerine.

Workout (8:45am):

3.10 mile interval run! This was a great little run and because I was alternating between easy and challenging,ย I was sweating like crazy by the end. I was super sore from Monday’s workout with Best Body Bootcamp + Bikram, so it felt good to stretch my legs.

But this is when I ran out of time to grab a snack. UGH!!

Lunch (11:30am):

By the time I sat down to eat, I was starving!

Salmon salad (teryiaki salmon, cranberries, spinach, apples, pecans) + a side of fruit (watermelons, pineapples, grapes, peaches, strawberries) + a handful of animal cracks for desert. Okay, I had 3 handfuls.

Snack (3:30pm):

I packed a whole weat tortilla + almond butter + half a banana for a snack because I knew it would be a while before I got home and was able to eat.

Pre-dinner (5:30pm):

I was starving at this point yet AGAIN. I grabbed a handful of carrots and also had a small serving of the squash casserole at the KKG house. I LOVE this squas casserole but I already had dinner plans so I just had a little bite!

Dinner (7:45pm):

Dinner at Banditos for one of my best friends Andy!! We met our freshman year in the journalism school and I literally love him to death.

I ordered a skinny margarita and a fajita chicken salad (grilled chicken + bell peppers + tomato + avocado + torilla strips + cheese).

I stayed away from the chip basket until my dinner came butย  after I ate I was still starving and I ate entirelyย TOO MANY CHIPS. Gross. Ugh!!!!! Oh well. Whatever. Ha we all eat too much sometimes.

Desert (9:30pm):

Still hungry. 3 squares of Dove dark chocolate unpictured.

WIAW: {Newks Twice and HAPPY BIRTHDAY ELIZABETH!!}

Hey friends!

How are you guys?! Before I jump into WIAW… I want to give a HUGE HAPPY BIRTHDAY to one of my best friends in the whole world, Elizabeth Ansbro!! I am SO excited to celebrate with you in just a few short hours!! WAAAHHOOO!!!

Beautiful Birthday Girl!!!!!!

Thanks for always being the BEST FRIEND I could ever ask for. Oh and I guess for putting up with my weird habits (Elizabeth and I lived together in the KKG house last year and will live together again this year). She honestly has one of the kindest hearts imaginable and always has the best advice for when I am acting like a completely unstable, insane person! AND she has just landed this awesome job in big D from her internship in Chicago this summer… because she is kinda like a genius, smart, motivated, gorgeous, FABULOUS individual!! Love you more than you will ever know ๐Ÿ™‚

I am doing this post super fast so I apologize for any spelling/ grammar errors. I have a lot of packing to do and am leaving in an hour to head back to Dallas! My eats were completely ALL over the place yesterday haha so just bear with me!! Thanks Jenn for hosting this!

Breakfast:

Van’s powergrain waffle topped with almond butter, flax, chia, and my favorite banana + blueberry combination. Drenched in syrup. DUH!!

Lunch:

Parker’s mom is amazing and brought me lunch to their house so I could see Gumbo one more time!

My Girl!!

I had my favorite Newks salad :)…. called “The Newks Favorite” (chicken, pecans, gorganzola cheese, dried cranberries, artichoke hearts, grapes). That salad looks like it is bigger than my head? Oh… wait it is. And I ate every.last.bite. She also brought me some chocolate because she knows this is where my true love lies. Gigantic salad +Mint chocolate goodies = the way to my heart. P… love ya but your mom has you beaten by like 28198219281920 points right now.

Snack:

Unpictured banana + almond butter before a quick outdoor interval run –> It was TOO HOT!!!!

Dinner:

I went to see Becca perform for All Sports Night (where they introduce the sports teams/ cheerleader/ dance teams, etc. for the year) at my old high school! She did amazing. Can NOT believe this baby is a senior! Time has flown by.

My family went to Newks for dinner. HA twice in one day?!! If you can not tell, Newks is a staple where I live. There are several around town but they have the best sandwiches, salads, pizzas, etc. Mom has been raving about their salmon ceaser so that is what I got! It was delicious.

I came home and had a Weight Watchers (No… I am not doing WW!!) Chocolate Bar and then packed my little life away.

Off to put everything in the car and maybe squeeze in like a 20 minute workout?! Better than nothing right? See you guys as soon as I am all moved in and settled!
