foodie friday: {thankgiving inspired breakfasts}

Hi friends!

So you guys probably remember that I made a lot of yummy food this summer when I had a kitchen. Unfortunately, I do not have a kitchen at school because I live in the Kappa house. NOT that I am complaining at all that I have all of my meals made for me… I still really miss being in the kitchen.

I will be home the whole week for Thanksgiving and you better believe that is where I will be living. Sorry mom and dad… I know you love when I cook all day 🙂 And because I naturally have to pin every single recipe I see, I have quite an array of different options to make.

I have been on a giant recipe searching “bread-y” breakfast kick. I have been craving spice bread. Pumpkin muffins. Apple muffins… any and all things that smell and taste like fall.

Come on… you know there is absolutely NOTHING better than a warm piece of yummy bread and coffee to start your belly off happy for the day.

Some of these recipes are healthy. Some are absolutely not.

What do you think I should make?

wiaw: {election day fun}

Hi friends!!!

So… before I jump into yesterday’s eats let’s talk about the fact that I 100% think election day should be a holiday. I was entirely too focused consuming myself with the news and didn’t do a lick of one productive school thing. Or maybe that is because I am a complete journalism junkie? Yeah… that is probably it.

Anyways… On to what I ate during my own election day “holiday”.

wiawI knew it was going to be a very long night (it was not nearly as long as I expected!) so I knew I needed to full properly in the morning and squeeze in a quick workout.

Breakfast 8 am:


After a morning run and walk, I fixed a quick bowl of oatmeal + a spoonful of almond butter + half a banana + handful of blueberries. Tastes just like a muffin!

Lunch 11:45 am:

Monday night I picked up a few things from Central Market to have on hand for the day.

Grilled chicken+ cranberries + quinoa + a little Kappa pasta salad bc I love it!

Anyone else love the sweet and salty combination of cranberries with meat or fish? I love it!

Snack (3:30 pm):

I had a ThinkThin bar for some major protein. I swear these things can keep me full for hours!

Dinner 5:30 pm:

Even though the pizza in the journalism school smelled fantastic, I knew that my stomach would probably not appreciate it too much and I did not want to be uncomfortable all night sitting at the anchor desk.

Salmon ceaser salad (also from Central Market… can you tell I love that place?).

Desert 8:30 pm:

I brought an apple + nutella just in case my stomach was grumbling… and it was.

Overall, such a fun day! No matter what the outcome was or what your opinion is, we are all still Americans and I fully intend to support President Obama for another 4 years!!

Oh well hello there friends!!

So remember when I left you on Friday and I told you I was going to eat super clean all weekend… HAHA. #planfailed

Oh well… it is a new week and all I can do is start fresh. But we did have a GREAT weekend!! It was honestly so much fun.

Alright… so what is round 2 of my plan?

Well this week is crazy I have to tell you… and I am leaving town again on Friday!!

We are covering the election tonight for SMU so I will be up ALL night long in  the journalism school but I really could not be more excited about it!! #SMUvotes

As far as working out goes, I have no idea what my schedule will look like. So clean eats are a must!!

foodie friday: {taking a break from being healthy}

Hi friends!

Happy Friday. Can ya believe the week is already over? This week is absolutely flying by!!

So… let’s talk about something. Because I seem to have forgotten this little blog is about healthy living. This week I have just not been healthy.

I have had completely normal workouts because I crave the endorphins BUT my eating has been completely off.

Something I have not shared with you, because honestly I just wanted to keep it to myself, for the past month-ish I have been following the Tone It Up Nutrition Plan. I have not been doing it as strictly on the weekends but for the most part, I was really good about it. Why did I do this? To feel better. I just honestly needed something to get my snacky little fingers out of every single chip bag or chocolate jar at the Kappa house.

What has been different about this week? I don’t really know. I have not wanted a single vegetable. Usually I will pick a healthier option over the unhealthier option because that is what I genuinely want. But not this week. This week I have been craving salty snacks, Halloween candy, ice cream, etc. Last night I ate two gigantic ooey gooey, warm chocolate chip cookies.

Do I regret this? Kind of. Only because I have been focusing on clean eating for a few weeks and I have felt so much better. Do I think that 5 days can ruin it? Absolutely not. Do I need to jump back on the bandwagon NOW? Absolutely.

However, because I have been lacking in the nourishing eats department this week, it just reminds me how important it is to actually take care of my health. I have more energy. I am less cranky. I am able to focus more in class. I sleep better. I feel like myself.

I wanted to share this with you because I think it is important to not just tell you guys about all my workouts and healthy eats. I slip up all the time.

So… even though it is Friday I am challenging myself with an “eat clean weekend challenge.” Will I stick to it perfectly? Probably not. I am going to see Parker and I will probably slip up… but I am making a conscious effort to cut the sugar and processed food so that this unhealthy streak does not turn into anymore than these past 5 days. I have all of my little snacks packed and ready to go.

Monday I will give you a full report on how I did.

wiaw: {halloween wish list}

Good morning friends and Happy Halloween!

To be honest, I am not the biggest fan of halloween for adults. I definitely think it is more of a little kid holiday. With that said, I don’t exactly mind all of the goodies that go along with it. I have been eating candy and sweets left and right… but it is Halloween right? No. I have the world’s worst headache from all of the sugar… but oh well 😉

I actually wrote one of my articles for The Daily Campus on how to Tackle the week of Halloween treats. Even though I have not been following my own advice, here is the candy guide I mapped out in my piece. (My article got picked up by Pegasus!!! WOHOO!!!!)

For today’s WIAW, I put together this little “wish list” of what exactly I would want to eat on my perfect Halloween day. As always, thanks Jenn!

How much longer do I have to wait to have kids and participate in all of these fun eats?!? Totally kidding :)!

mimm: {i am so blessed}

Hi friends!

I am back!! How is everyone? I feel so out of the loop in everything in the “blog world” and I am excited to spend today catching up on reading about what some of you guys have going on.

Do you ever have those time when your heart feels so happy, content and full? When you realize that the people you love are what life is all about?

This weekend was SO much fun. I literally had the best time! I am so lucky to have such an amazing, supportive  family and friends.

wiaw: {healthy eats come back in my life}

Hi friends!

Long time no talk. When I left you on Friday I was headed to Vegas and then to Cali to visit my sister. It was a whirlwind of 5 days but it was SO much fun!! I am still putting together all of our pics, etc. so I will have a FULL recap super soon.

Today let’s talk about getting some healthy food back into my life. In Vegas I basically ate whatever and whenever. We really didn’t even eat all that much, it was just a bunch of junk whenever I did sit down to eat (if you can imagine!!). However, it was an awesome 3 days with amazing friends and I wouldn’t take back a single morsel of food or beverage I consumed.

SOO… now let’s talk about how I am getting back on track/ planning to STAY on track for the next week!! Thanks Jenn for hosting this!

Even though I was traveling yesterday and was in the airport, my body was craving healthy eats.

Workout (8:45 am):

I started the day with a 40 minute sweat session in the basement gym of my sister’s dorm (I want a basement gym!!!) while she was in class.

Breakfast (9:45 am):

I forgot to snap a picture of breakfast but it was a banana + bite of scrambled eggs (way to buttery for me!!) + fresh pineapple.

Lunch (12 pm):

For lunch I grabbed a chopped salad from Subway before my flight.

Shredded lettuce + spinach + turkey + olives + tomato + pickles + balsamic vinegar. I got in some much needed veeeegggiiiieesss.

Snack (2 pm):

As a snack I had some sliced apples and dipped them in my Justin’s Vanilla Almond Butter Packet. This almond butter tastes like candy. So, so, so good.

I also had a couple of handfuls of almonds between flights!

Dinner (8 pm):

Mallory picked me up from the airport and we went to Central Market to grab dinner. I wasn’t starving so I had the spring rolls! Delicious.

Bedtime snack:

When I got back, I had a couple of squares of dark chocolate while unpacking. This is my new favorite brand! Amazing.

Today I am planning on cleaning up my eats even more… I started with some egg whites and spinach and am currently snacking on a grapefruit trying to decide if I should go on a run?!?

Ohhhhh…. and I am taking a personal day. #notsorryaboutit.

friday funday: {vegas here we come!}

Hi friends!

After a really fun few days with my mom and a birthday dinner for Mallory at Abacus last night… a few glasses of champagne and a fantastic meal finished off with a Sprinkles cupcake…

cutest party favor ever (i swear i got my nails done today ;))

and running around ALL day today getting by life together…

And packing everything into  a CARRY ON!! Who am I these days?!?

… and wearing my typical airport uniform… button down, leggings, oversized tank, flats and entirely too much jewelry….

I am officially PUMPED for Vegas!

We are going to have so much fun… I may not be around this little blog until next Tuesday or Wednesday… but I will have a FULL recap for ya when we return.
